Marinated cucumber salad with apple cider vinegar and fresh chopped dill is a delicious spring or summer side salad that is perfect to serve for picnics and BBQs. Light, healthy, delicious recipe that is quick and easy to make.
Add sliced English cucumbers, cut up bell peppers, cut in half grape tomatoes, chopped red onion and fresh dill to a mixing bowl and combine vegetables well.
2 English cucumbers, 1/2 bell peppers, 1/2 cup grape tomatoes, 1/4 chopped red onion, 2 teaspoons fresh chopped dill
In a separate, smaller bowl, add oil, apple cider vinegar, sugar and mix well.
2 tablespoons olive oil, 2 tablespoons apple cider vinegar, 1 1/2 teaspoons white sugar
Season dressing with kosher salt and black pepper.

Pour olive oil and vinegar mixture over sliced cucumbers and toss dressing and vegetables well until all is covered.
Let flavors mingle and marinate for another 30 minutes, stirring occasionally.
Serve immediately or refrigerate covered (in an airtight container) until ready to serve.
Mix well before Serving to prevent settling. Add additional salt and pepper if desired.

OPTIONAL:
Add additional sugar (1 teaspoon at a time) if you'd like a sweeter version of this salad - just taste the oil/vinegar mixture before dumping it over the cucumber salad
I buy bags of the red, yellow, and orange baby peppers and we eat them a lot in our salads, so I pulled tiny versions of each one and cut them up for my salad - feel free to get creative with the colors!
Personally, I enjoy extra tomatoes, so the second time I made this, I added another cup of cut-up grape tomatoes to the salad- you do not really need to change any other part of it if you do that. It brings in a lot more color as well
If you do not have apple cider vinegar on hand, use white vinegar.
