Fresh Green Bean Casserole with FRESH Green Beans, Condensed Mushroom soup and crunchy onion topping, a great old fashioned and time-honored green bean side dish without canned green beans!
2cupsshredded cheddar cheesedivided into 1 cup sizes
6oz.french fried onionsdivided in half
salt and pepper
Instructions
Preheat oven to 350 and grease a casserole dish with nonstick cooking spray. Set aside.
Add cut fresh green beans to a steamer basket and boil in hot water for 8-10 minutes or until tender. It is fine to pressure cook green beans as well, as long as they are cooked through before next step.
Add tender green beans to a large mixing bowl, stir in 1 can of cream of mushroom soup, 1 cup of shredded cheddar cheese, and half of the french fried onions. Mix all ingredients together well.
Season the entire dish with kosher salt and black pepper.
Add combined green bean casserole into a prepared casserole dish and spread mixture evenly.
Bake casserole for 30 minutes, in a preheated oven, uncovered.
Open oven and top casserole with remaining shredded cheddar cheese and the rest of the fried onions and bake for an additional 5 minutes or until cheese is melted.
Optional, broil for 1-2 minutes for a golden brown topping.
Notes
Can green bean casserole be made without mushroom soup? Yes, but it would definitely change the flavor profile. There are many different types of flavors available in grocery stores today. Some brands offer vegetarian options. So don’t worry too much about finding the right brand of mushroom soup. What other condensed cream soup flavors are there? There are several varieties of condensed soups available. The best thing you can do is check out the entire line of Campbell’s cream soups on their website or at the store. Is Green Bean Casserole Healthy? To be honest, there are so many nutritional diets, needs, and goals that people have that health is a very important and personal decision. I am all about balance and find that green bean casserole, even if a little indulgent with some crunchy fried onions, is worth eating on holidays.
