This marshmallow popcorn is soft, chewy, and buttery, made with melted marshmallows, brown sugar, and popcorn. It has a texture similar to a popcorn ball but is much easier to eat in small snack pieces, making it a great no-oven choice for parties and snack tables.
Add the popped popcorn to a large bowl and set aside.
Line a baking sheet or flat surface with parchment paper and set aside.
In a saucepan over medium low heat, add the marshmallows, butter, and brown sugar. Stir constantly until completely melted. Bring the mixture to a boil and continue stirring constantly for one full minute.
Remove from heat and immediately pour the marshmallow mixture over the popcorn. Mix well until the popcorn is evenly coated. Spread the marshmallow popcorn onto the prepared parchment paper and allow it to cool completely.
Store leftovers at room temperature in a sealed container or bag.
Notes
This popcorn is meant to be soft and chewy rather than crunchy. Make sure to stir constantly while the marshmallow mixture is melting and boiling to prevent scorching.
