Marshmallow Popcorn

This marshmallow popcorn is similar to a popcorn ball, but much easier to eat. It is softer and chewier, with a buttery, sweet coating and popcorn that is meant to be a little soft rather than crunchy.

That texture is part of what makes this marshmallow popcorn work. If you enjoy nostalgic treats that lean more chewy than crisp, this one fits right in.

  • This recipe works with either microwave popcorn or freshly popped kernels. A salted buttery popcorn works best. I popped my own popcorn using unpopped kernels in my popcorn machine, and as long as you end up with about 12 cups, either method works.

Ingredients

  • 1 bag (10 oz) mini marshmallows
  • 1/2 cup butter (1 stick)
  • 2/3 cup brown sugar
  • 12 cups popped popcorn

Marshmallow Popcorn Recipe

Add the popped popcorn to a large bowl and set aside.

Line a baking sheet or flat surface with parchment paper and set aside.

In a saucepan over medium-low heat, add the marshmallows, butter, and brown sugar. Stir constantly as the mixture melts to prevent scorching.

Once fully melted, bring the mixture to a boil and continue stirring constantly for one full minute. Remove from heat.

Immediately pour the marshmallow mixture over the popcorn and mix well until the popcorn is evenly coated.

Spread the marshmallow popcorn out onto the prepared parchment paper and allow it to cool completely.

Once cooled, break apart any large pieces before serving.

Store leftovers at room temperature in a sealed container or bag.

Helpful Tips Before You Start

This recipe sets up quickly once the marshmallow mixture is poured over the popcorn, so it helps to have your parchment paper ready before you start.

Stir constantly while the marshmallows, butter, and brown sugar melt and boil, since sugar can scorch fast if left unattended.

If you prefer larger clusters, let the popcorn cool mostly undisturbed, then break it apart once set.

Serving Ideas and Snack Pairings

For snack tables, this works well paired with other easy treats like no bake cake pops or single serving rice krispie treats, while caramel popcorn snack mix adds contrast for anyone who wants something crunchier.
