Instructions
Prep: Preheat your oven to 350°F (175°C) and grease a 9" square baking dish with nonstick cooking spray.
Mix Cheesy Base: In a bowl, combine 10.5 oz. of cream of chicken soup, 1 cup of cottage cheese, 4 oz. of softened cream cheese, 1 cup of diced onions, 1.5 tsp of creole seasoning, 1 tsp of garlic powder, 0.5 tsp of onion powder, and 1 tsp of dried parsley. Stir everything until well mixed.
Add Chicken: Fold in 5 cups of cooked and shredded chicken into your cheesy mixture. Then, spread this mix evenly in your prepared baking dish.
Prepare Topping: Crush 1 sleeve of Ritz crackers into small pieces (do this gently to avoid making a mess) and mix with 4 tbsp. of melted butter in a small bowl until the crackers are nicely coated.
Add Topping & Bake: Sprinkle the buttery cracker crumbs over your chicken mixture. Bake everything uncovered for 40 minutes.
Rest & Serve: After baking, let your dish stand for about 10 minutes. If you like, sprinkle some fresh chopped parsley on top for a burst of color and fresh herbs before serving.
Notes
If adding shredded cheese, add it before layering with Ritz cracker topping.Ensure your cream cheese is softened before mixing for a smoother consistency. Avoid using the microwave for this; leaving it out at room temperature for about 15 minutes should do the trick!
