Million Dollar Chicken Casserole (With Ritz Crackers)

Ingredients
 

  • 10.5 oz. cream of chicken soup
  • 1 cup cottage cheese
  • 4 oz. cream cheese softened about 15 min on counter room temp before using for easier mixing, do not microwave
  • 1 cup diced white or yellow onions
  • 1.5 tsp creole seasoning
  • 1 tsp garlic powder
  • .5 tsp onion powder
  • 1 tsp. dried parsley
  • 5 cups cooked and shredded chicken pressure cooker or precooked Rotisserie chicken works great

Topping

  • 1 sleeve Buttery Crackers (Ritz) aprox. 30 crackers
  • 4 tbsp.  butter
  • shredded cheese optional – suggested Cheddar or Mozzarella

Instructions

  • Prep: Preheat your oven to 350°F (175°C) and grease a 9" square baking dish with nonstick cooking spray.
  • Mix Cheesy Base: In a bowl, combine 10.5 oz. of cream of chicken soup, 1 cup of cottage cheese, 4 oz. of softened cream cheese, 1 cup of diced onions, 1.5 tsp of creole seasoning, 1 tsp of garlic powder, 0.5 tsp of onion powder, and 1 tsp of dried parsley. Stir everything until well mixed.
  • Add Chicken: Fold in 5 cups of cooked and shredded chicken into your cheesy mixture. Then, spread this mix evenly in your prepared baking dish.
  • Prepare Topping: Crush 1 sleeve of Ritz crackers into small pieces (do this gently to avoid making a mess) and mix with 4 tbsp. of melted butter in a small bowl until the crackers are nicely coated.
  • Add Topping & Bake: Sprinkle the buttery cracker crumbs over your chicken mixture. Bake everything uncovered for 40 minutes.
  • Rest & Serve: After baking, let your dish stand for about 10 minutes. If you like, sprinkle some fresh chopped parsley on top for a burst of color and fresh herbs before serving.

Notes
