Oven Roasted Diced Sweet Potatoes
Simple diced sweet potatoes smothered in savory oregeno and lots of butter is a delicious way to enjoy the underrated sweet potato vegetable. Marshmallows isn't the only way to bite into a sweet potato!

Instructions
Preheat the oven to 350°F and grease an oven-safe baking dish with nonstick cooking spray.
Peel and dice the sweet potatoes into 1/2-inch pieces, ensuring they're all similar in size for even cooking.
3 sweet potatoes
Place the sweet potatoes in the baking dish, drizzle with oil, and toss to coat evenly.
2 tablespoons cooking oil
In a small bowl, mix the oregano, salt, and pepper, then sprinkle the seasoning over the sweet potatoes.
1/4 teaspoon oregano,
1/4 teaspoon salt,
1/4 teaspoon black pepper
Cover the dish with foil and bake for 20 minutes.
Remove the foil and continue baking for another 20 minutes or until the potatoes are fork-tender.
Serve with a generous amount of butter.
