Why Roasted Diced Sweet Potatoes?

Other than stove top sweet potatoes, roasting diced sweet potatoes is one of my favorite ways to enjoy them. By cutting them into smaller pieces, they cook faster than whole baked sweet potatoes, but still have that same rich flavor. Plus, once they’re in the oven, this recipe is almost hands-off, making it super easy to pull together while you work on other parts of dinner.

  • 3 sweet potatoes, peeled and diced
  • Oregano
  • Salt

How to Cook Diced Sweet Potatoes in the Oven

Here’s a step-by-step guide to making the perfect roasted diced sweet potatoes:

Preheat your oven to 350°F and grease a baking dish with nonstick spray.

Add the peeled and diced sweet potatoes to the dish, along with a little cooking oil, and toss to coat evenly.

Mix together the oregano, salt, and pepper, then sprinkle over the sweet potatoes.

Cover the dish with foil and bake for 20 minutes.

Remove the foil, then return the dish to the oven for another 20 minutes, or until the potatoes are tender.

Serve hot, topped with a little melted butter for extra flavor.

How Long Do You Cook Diced Sweet Potatoes in the Oven?

The time to bake diced sweet potatoes isn’t bad at all and pales in comparison to baking sweet potatoes whole. In this recipe, cook sweet potatoes for about 40 minutes at 350°F.

If you were baking a whole sweet potato, it would take closer to 60 minutes at a higher temperature. I’ll be sharing a recipe for whole baked sweet potatoes soon!

The Difference Between Sweet Potatoes and Yams

People often confuse sweet potatoes and yams, but they’re actually quite different. Sweet potatoes have a soft texture and a naturally sweet flavor with orange flesh.   • 3 sweet potatoes peeled and cut into 1/2″ pieces
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • butter for serving

Instructions

  • Preheat the oven to 350°F and grease an oven-safe baking dish with nonstick cooking spray.
  • Peel and dice the sweet potatoes into 1/2-inch pieces, ensuring they’re all similar in size for even cooking.

  • In a small bowl, mix the oregano, salt, and pepper, then sprinkle the seasoning over the sweet potatoes.

  • Remove the foil and continue baking for another 20 minutes or until the potatoes are fork-tender.
