Preheat oven to 350 and grease an ovenproof or castiron skillet. Set aside.
Add vegetable oil and minced garlic in a shallow medium sized dish.
In a second separate dish, add Panko Crumbs, grated Parmesan cheese, and all seasonings. Mix together well.
Dip chicken breasts into the garlic oil and coat on both sides of the breast.
Immediately dip chicken into the dry crumb mixture and coat on both sides pressing in as needed.
Place breaded chicken breasts into prepared pan.
Repeat until all chicken is coated.
Bake panko chicken breasts for 30-35 minutes or until chicken is no longer pink and juices run clear. The timing largely depends on the thickness of the chicken. . Chicken is complete when a meat thermometer reaches 165 degrees on the thickest part of the chicken.
Serve parmesan chicken with an extra sprinkle of shredded Parmesan cheese if desired.
Notes
Suggested oil: Use an oil like canola or vegetable oil that has a high smoke point and less robust flavor.
