Summer salad recipe with fresh strawberries and papaya is a gorgeous way to enjoy a light, crisp and refreshing lunch. Perfect bright pairing can be enjoyed by itself or alongside a picnic burger.
½fresh Papayaseeds removed, peeled and cut into 1/2" cubes
2cupsripe strawberries quartered
1cupfresh spinach leaves
1smallcucumberquartered
1largetomatodiced
¼red onionsliced thin
¼cupfresh cilantrochopped
½cupfeta cheese crumbles
Homemade Dressing
⅓cuplemon juice
¼cupolive oil
1tbsphoney
2tspDijon Mustard
ancho chili powderoptional, to taste
Instructions
In a mixing bowl, combine cubed papaya, quartered strawberries, spinach leaves, quartered cucumber, diced tomato, sliced red onion, and fresh cilantro leaves. Mix well.
In a small bowl, combine lemon juice, olive oil, honey, dijon mustard, and optional chili powder. Whisk dressing together well.
Drizzle dressing on top of spinach strawberry salad and mix well to evenly combine.
Serve immediately topped with feta cheese.
