Pineapple cheese casserole made with delicious sweet pineapple and cracker crumb topping is a unique sweet side dish that goes perfectly with holiday ham.
20oz.pineapple chunksdrained, reserve 1/4th cup juice
20oz.crushed pineappledrained
¼cupgranulated sugar
2cupscheddar cheeseshredded
⅓cupall-purpose flour
30Buttery Crackerscrushed - Ritz is fine
½cupbuttermelted
Instructions
Prep Pineapple Casserole
Preheat the oven to 350 degrees. Drain the pineapple chunks, reserving only 1/4 cup of the pineapple juice.
Add pineapple chunks and reserved juice to a mixing bowl with drained and crushed pineapple and white sugar. Mix everything together well.
Fold in the shredded cheddar cheese, add all-purpose flour, and mix well. Spoon the pineapple mixture into a 1-1/2 quart casserole dish.
Topping & Baking
In a smaller mixing bowl, combine melted butter and crushed crackers to create a golden brown topping.
Spread on top of the pineapple mixture, end to end, and bake casserole for 30 minutes.
Remove from oven and let stand 5 minutes and serve.
Notes
Toppings: We recommend Ritz crackers, but Panko crumbs are not a bad choice.How to store leftovers:Leftovers can be stored in the fridge in a container for 2–3 days. But please note that the cracker crumb topping will soften in the fridge and change the texture. This dish is best eaten and served fresh the same day, if possible.Alternatives: It's OK to omit the extra juice or alter the sugar content. Pineapple already has quite a bit of sugar, so scaling back may be preferred to taste.Add cooked chunks of ham for more of a meal or a bit of shredded coconut for more of a dessert recipe feel.
