Red White and Blue Cheesecake Stuffed Strawberries
Red, white and blue chocolate dipped strawberries stuffed with creamy homemade cheesecake filling and topped with holiday sprinkles is an equally beautiful and delicious July 4th appetizer or dessert that makes a serious impressions. This easy 4th of July dessert recipe turns large fresh fruit strawberries into chocolate layers of red, white and blue to stuff with cheesecake. An impressive but easy no bake holiday dessert, these chocolate stuffed strawberries are also great for any holiday or special occasion. Red, white and blue are the colors of the United States flag and also go great for Memorial Day, Labor Day and Veterans Day appetizer trays.
1lb.fresh strawberrieswashed and patted dry with paper towels
1brick8 oz. cream cheese, softened
1/3cuppowdered sugar
1teaspoonvanilla
1tablespoonhalf and half
1package white candy melts
1package royal blue candy melts
redwhite and blue sprinkles
Instructions
Prepping Strawberries
Wash one pound of large fresh strawberries.
Cut a small slice off the bottom of a strawberry so it stands up straight on a tray.
Cut the top off the strawberry and discard.
Using a strawberry huller, scoop out the insides of the strawberry and discard.
Pat berries again with paper towel to dry.
Add a piece of parchment paper to a baking sheet.
Chocolate Layers
In a microwave safe bowl, work with half a package of candy melts at a time.
Heat half the package of white candy melts according to package directions, which is usually to heat 15 seconds at a time, stir and repeat until chocolate is fully melted. Be careful not to burn your chocolate. This process is better to go slow than ruin the bowl and chocolate can be sensitive.
Dip bottom 2/3 of strawberry into melted white chocolate, going past the middle of the berry but still leaving a portion of the exposed red strawberry.
Let excess chocolate drip into the bowl and place berry on prepared wax paper standing straight up.
Repeat until all berries are dipped. Refrigerate entire sheet pan to harden before moving on to next step.
Repeat process with the royal blue candy melts, but dip only the bottom 1/3 of the berry into the candy. Refrigerate strawberry set to harden.
In a mixing bowl, beat softened cream cheese, sugar, vanilla and half and half until smooth and creamy.
Place cheesecake mixture into a piping bag fitted with a 1M star tip.
Pipe cheesecake filling into each berry.
Top strawberry with sprinkles.
Refrigerate until ready to serve.
Notes
Clean out fridge first: There is nothing worse than remembering at the end of a recipe there is no room in the fridge. If you are planning on setting chocolate in the fridge for a quicker set, make sure there is room first! Use large strawberries: The larger the strawberry, the more cheesecake filling can be stuffed inside. Parchment paper for no stick: The last thing you want is chocolate covered strawberries to be sticking. Put down a piece of parchment paper on a sheet pan and sit strawberries on to properly harden. Work with one layer at a time: Make sure each chocolate layer is completely set before moving on. Makes great decoration: These red, white and blue strawberries are SO awesome to eat but don't discount putting them on cheesecake, cakes or brownies as a topper too!
