Poke cake made with jello is a beautiful, festive, and fun holiday cake. Customize with red and blue Jello-o, whipped topping, and berries which make it a perfect July 4th (or any Patriotic holiday) cake recipe.
1yellow cake mixbaked and cooled according to package directions
1small package3.4 oz, blue jello
1small package3.4 oz, red jello
2cupswaterdivided
whipped toppingthawed
chopped fresh strawberries
fresh blueberries
Instructions
Use a fork to poke holes into the cake about 1/2" apart until entire cake has holes.
Add 1/2 cup boiling water and jello and mix well until completely dissolved, about 2 minutes.
Add 1/2 cup cold water and mix well.
Very gently and slowly, pour jello mixture over cake in small "splotches".
You will need to pour jello repeatedly over the same splotches until completely gone. Just remember to go slow!
Refrigerate jello poke cake for 10-15 minutes before moving onto next color.
Once jello is put into the poke cake, put in fridge for one hour before moving onto decorating.
When cake is cooled or ready to be served, place whipped topping into a pastry bag fitted with a 4B tip and pipe topping onto the cake. Alternatively, you could easily use canned spray jello topping.
Add fresh berries and blueberries on top of the cake to really make it look red, white, and blue for July 4th, Memorial Day, or Presidents Day. You could also use your berries to make a flag!
Keep cake in fridge when not serving.

Blue Jello Choices: Berry Blue, Blue Raspberry,
Red Jello Choices: Cherry, Black Cherry, Cranberry, Strawberry, Strawberry Banana, Watermelon, Raspberry
This cake must be kept in the fridge as whipped topping will melt when left in heat too long.
Instead of Yellow Cake, you could also use a White Cake Mix.
