Ritz Cracker Thin Mints
These homemade Thin Mints are a quick 2 ingredient copycat using Ritz crackers and Andes Crème de Menthe chocolates. Crisp, minty, and coated in smooth chocolate, they’re the perfect no bake treat when Girl Scout season is over.

Andes Crème de Menthe Mints

Instructions
Line a baking sheet with parchment paper and set aside.
Unwrap the Andes mints and place them in a small saucepan. Heat on low, stirring often, until smooth and melted. Remove from heat.
Tip: If the chocolate thickens while you’re dipping, just return the pan to low heat briefly to loosen it up again.
Dip each Ritz cracker into the melted chocolate, flipping to coat both sides evenly. Let the excess drip back into the pan.
Place dipped crackers on the prepared baking sheet in a single layer.
Allow the chocolate to firm at room temperature, or refrigerate (freezer is fine too) for about 30 minutes for quicker setting.
Once firm, remove from baking sheet and serve.
