2 Ingredient Homemade Thin Mints

When Girl Scout cookie season ends and you’re craving Thin Mints, this quick 2 ingredient copycat recipe is the answer. Using Ritz crackers for the base and Andes Crème de Menthe chocolates for the coating, you can make a whole batch in under 30 minutes.

These aren’t an exact replica of the originals, but they come pretty close with that crisp chocolate shell, cool minty flavor, and satisfying crunch.

  • 1 package (4.67 oz) Andes Crème de Menthe Mints (amazon)
  • 22 Ritz crackers (about 1 sleeve)

How to Make Homemade Thin Mints

Line a baking sheet with parchment paper and set aside.

Unwrap the Andes mints and place them in a small saucepan. Heat on low, stirring often, until completely melted and smooth. Remove from heat.

Dip a Ritz cracker into the melted chocolate, flipping to coat both sides evenly. Let any excess drip back into the pan.

Place the coated cracker on the prepared baking sheet. Repeat with remaining crackers.

Let the chocolate firm at room temperature, or place in the refrigerator for about 30 minutes until set.

Remove from the baking sheet and serve.

Yield: Makes 20–22 cookies (from one sleeve of crackers).

These homemade Thin Mints are a quick 2 ingredient copycat using Ritz crackers and Andes Crème de Menthe chocolates. Crisp, minty, and coated in smooth chocolate, they’re the perfect no bake treat when Girl Scout season is over.

Instructions
