Preheat oven to 400 degrees and grease a 9x13 baking dish.
Bake the Eggs
Whisk together eggs and milk and pour into the prepared baking dish. Season with salt and pepper and sprinkle with cheese.
Bake for 8-10 minutes or until eggs are set. Remove from oven and let cool slightly to handle.
Reduce oven to 375 degrees and line a baking sheet with parchment paper.
Assemble Sausage and Egg Crescent Rolls
Using the crescent rolls as a visual pattern, cut the eggs into the same eight triangle shapes.
Separate the crescent rolls and place them onto the prepared baking sheet.
Place one egg triangle on top of the crescent roll and place the sausage on the wide end of the eggs.
Roll up, beginning with the wide end, and gently press the pointed tip to the roll.
Repeat until all eight are wrapped. Bake for 9-12 minutes or until crescent rolls are golden brown.
Remove from oven and let stand for a few minutes and serve.
Notes
We recommend shredded cheese for ease, but sliced American cheese is an excellent choice for this hearty breakfast. Bring the heat with a dash of pepper flakes or dipped hot sauce, or get creative with other spices like Everything Bagel on the eggs.There are so many ways to get creative with the flavors. Try using Italian Sausages or mixing up entirely with other proteins like ground breakfast sausage, turkey sausage, or slices of Canadian Bacon (ham).
