Add cream cheese cubes and heat on low, mixing until cream cheese is smooth.
Remove pan from heat and stir in 1 cup cheddar cheese, 1 cup swiss cheese, and dijon mustard. Mix ingredients well.
Spread cream cheese mixture evenly into ovenproof pan or baking pan.
Bake dip for 15-20 minutes until hot and melty.
Top dip with remaining 1/2 cup cheddar cheese and reserved sprinkle of sausage. Broil top to quickly melt and brown cheese for 2 minutes.
Serve with fresh chopped parsley and enjoy while still warm and melty.
Notes
How to make Sausage Dip SpicierTry adding green chilies, using hot sausage, tomatoes with chiles (like Rotel), adding a tsp of liquid smoke, or even some cayenne pepper to change the flavor profile. Extra heat is pretty simple when it comes to dips.
