Slow Cooker Cheeseburger dip is a super easy, hot, melty cheese dip with seasoned ground beef, beans, and Rotel. Perfect for a hearty game day recipe, this Velveeta-made Dip keeps it easy and tastes like a cheeseburger in dip form. .
Start by seasoning and cooking the ground beef (or sirloin) in a skillet over medium heat. Once fully cooked, drain off any excess grease.
1 lb. ground beef or ground sirloin
In your crockpot, add the cubed Velveeta (either original or Queso Blanco), the can of Rotel Tomatoes, the cooked and seasoned ground beef, sour cream, and taco seasoning. Its going to be a little clunky to stir, but do the best you can. A spatula sometimes makes this process easier.
1 lb Velveeta cheese, 10 oz. Rotel Tomatoes, 1/3 cup sour cream, 1.25 oz taco seasoning
Cover the crockpot with a lid and cook on HIGH for about 45 minutes. Be sure to stir every 20 minutes to help the cheese melt evenly. If you're using a smaller crockpot, it might take a little longer for the cheese to fully melt, so just keep stirring every 20 minutes until the dip is smooth and creamy.
About 15 minutes before you're ready to serve, stir in the drained and rinsed black beans and let those warm up. If you add them too soon, they can get mushy so we save this to the last step.
