Begin by preparing potatoes. Place potatoes in a large stock pot and cover with water, ensuring the water level is about 1 inch above the potatoes.
Heat on a medium-high flame until the potatoes boil and are tender when pierced with a fork. Once cooked, drain and allow them to cool.
Preheat your oven to 425°F. Line a baking sheet with parchment paper and give it a quick mist of non-stick cooking spray.
When the pizza smashed potatoes are cool, make an X-incision on the top of each potato. Position them on your prepared baking sheet.
