Ingredients:
- 1.5 lbs. fresh baby potatoes (reds, golds, or Dutch yellow recommended)
- Pizza sauce
- Shredded mozzarella cheese
- Mini pepperoni
- Dried Italian seasoning
- Salt and pepper
How to make Smashed Potato Pizza.
- Add potatoes and cover with water in a large stock pot, ensuring it’s 1 inch above the potatoes. Heat on medium-high until they boil and become tender (check with a fork). Drain them and let them cool.
- Preheat your oven to 425°F. Prepare a baking sheet with parchment paper and spray with non-stick cooking spray.
- Once the potatoes are cooled, slice an X on top of each one. Place them on the baking sheet. Using another parchment paper square and the base of a glass, press down to flatten each potato to about 3/8″ thick. Ensure they don’t touch each other.
- Mist the potatoes with cooking spray, season with salt and black pepper, and bake for 10-15 minutes, just enough to get the edges brown. Remember that all ovens vary, so watch your timing. If you want crispier, leave in longer.
- Once crisped to perfection, top each potato with a teaspoon of pizza sauce, a tablespoon of cheese, and mini pepperoni bits. Sprinkle on some Italian seasoning.
- Add them to the oven for another 5-6 minutes or until the cheese melts beautifully.
