This Strawberry French Toast Casserole is baked with layers of soft bread, sweetened cream cheese, and a homemade strawberry sauce for the perfect breakfast or brunch dish. Easy to assemble, family-tested, and full of fresh flavor, it serves a crowd and can be made ahead for holidays or weekend mornings.
1lbfresh strawberriescut into small bite sized pieces
10eggs
2cupsmilk
1/3cupwhite sugar
1teaspoonvanilla
1teaspooncinnamon
12oz.cream cheesesoftened
1/4cupsmilk
1/2cuppowdered sugar
10 minute Strawberry Sauce
1cupwater
1cupwhite sugar
2tablespoonscornstarch
1lbfresh strawberriescut up
Instructions
Preheat oven to 350°F. Grease a 9×13 baking dish with nonstick cooking spray.
Cut Italian bread into 1-inch cubes. Place half in the baking dish.
In a bowl, beat cream cheese, powdered sugar, and 1/4 cup milk until smooth. Spoon dollops (or spread) over the bread.
Sprinkle with chopped strawberries and top with the remaining bread cubes.
In a separate bowl, whisk eggs, 2 cups milk, sugar, vanilla, and cinnamon until well blended. Pour evenly over the bread, covering as much as possible. Gently press bread into the mixture if needed.
Cover with foil and bake for 30 minutes. Remove foil and continue baking 20–25 minutes, until the center is set and the casserole is heated through. Let stand a few minutes before serving.
While the casserole bakes, make the strawberry sauce. In a saucepan, combine water, sugar, and cornstarch. Cook over medium-high heat until boiling. Boil for 3–4 minutes.
Stir in chopped strawberries, reduce heat to medium-low, and cook 10–12 minutes until thickened and bright red.
Spoon warm strawberry sauce over the casserole and serve hot.

This 9x13 Strawberry French toast casserole could serve anywhere from 12 large or 18 medium sized portions. It makes quite a bit of casserole!
If you watched the French Toast Casserole VIDEO, you may see that I assembled the recipe differently during the video. In that recipe, I did the bread, egg mixture, cream cheese spread and strawberries, then bake. Afterwards, strawberry sauce. Both ways work great!
