Strawberry French Toast Bake

If you’re looking for a breakfast recipe that feels special but doesn’t require a ton of effort, this Strawberry French Toast Casserole is the answer.
It’s one of those dishes I’ve tested in my own kitchen multiple times because my family requests it often, especially on holidays when we want something sweet but still hearty enough to hold everyone over until the main meal.

This recipe layers cubes of soft bread, a sweetened cream cheese filling, and a homemade strawberry sauce that tastes like it came straight from a diner pancake stack.
It’s baked in one dish, can be prepped ahead of time, and works just as well for brunch with friends as it does for a weekend breakfast at home.
What You’ll Need to Make It
I always recommend using fresh ingredients when possible, especially for the strawberries, since they make up both the middle layer and the topping. Here’s everything that goes in:
- Italian bread: Cut into cubes. Day-old bread is best because it soaks up the custard without turning soggy. Brioche or challah are also excellent choices.
- Cream cheese: Softened so it blends easily with the sugar.
- Powdered sugar, Milk, Eggs, White Sugar
- Vanilla & cinnamon: Adds classic warmth to the custard.
- Fresh strawberries: Chopped for layering and simmered into the sauce.
- Cornstarch: Thickens the strawberry sauce.
IMPORTANT NOTE: In the recipe video, I assembled the layers in a different order, but both methods work and give the same delicious result.
How to Make Strawberry French Toast Casserole
Step 1: Get the Pan Ready
Preheat oven to 350°F. Grease a 9×13 baking dish with nonstick spray.
Step 2: Build the First Layer:
Cut bread into 1-inch cubes. Spread half of the cubes in the bottom of the dish, saving the rest for later.

Step 3: Add the Cream Cheese Filling
Beat softened cream cheese, powdered sugar, and 1/4 cup milk until smooth. Drop spoonfuls of this mixture over the bread cubes.
Sprinkle with chopped strawberries, then top with the remaining bread cubes.

Step 4: Mix the Custard
In a bowl, whisk together eggs, 2 cups milk, sugar, vanilla, and cinnamon until smooth.
Pour evenly over the bread mixture, making sure every piece is coated.

Step 5: Bake Until Golden
Cover with foil and bake for 30 minutes. Remove foil and bake another 20–25 minutes, until the center is set and the top is golden brown.
Let rest a few minutes before serving.

Step 6: Make the Strawberry Sauce
While the casserole bakes, prepare the sauce. In a saucepan, stir together water, sugar, and cornstarch. Bring to a boil and cook for 3–4 minutes, stirring until thickened.
Add chopped strawberries, reduce the heat, and simmer for 10–12 minutes until the mixture is bright red and syrupy.

Step 7: Serve and Enjoy
Spoon the warm strawberry sauce over the baked casserole and serve right away.
Tips I’ve Learned Along the Way
- Prep ahead: Assemble the bread, cream cheese, and custard the night before. Cover and refrigerate, then bake in the morning.
- Mix up the fruit: Try blueberries, raspberries, or a combination of berries.
- Dress it up: Top with whipped cream, powdered sugar, or maple syrup for a little extra sweetness.
- Feed a crowd: This recipe serves 12-18 as part of a breakfast spread (depends on overall serving size).

Storing Leftovers the Right Way
Any leftovers should be refrigerated within 2 hours. Store covered in the fridge for up to 3 days. Reheat in a 300°F oven until warmed through.
Why I Keep Coming Back to This Recipe
This casserole is a variation of my Blueberry French Toast Casserole, and the process is just as simple. The strawberry version shines when you want something fresh and fruity, especially in spring and summer. It’s tested, reliable, and always a hit at family gatherings.

Notes
- This 9×13 Strawberry French toast casserole could serve anywhere from 12 large or 18 medium sized portions. It makes quite a bit of casserole!
- If you watched the French Toast Casserole VIDEO, you may see that I assembled the recipe differently during the video. In that recipe, I did the bread, egg mixture, cream cheese spread and strawberries, then bake. Afterwards, strawberry sauce. Both ways work great!
