Sweet potato cobbler with homemade cobbler topping, delicious and easy brown sugared sweet potatoes, a mouthwateringly amazing holiday dessert or side dish.
2-3poundssweet potatoespeeled and cut into 1/2" cubes
¼cupgranulated sugar
¼cupbrown sugar
½tsp.vanilla extract
1cinnamon stick2 inches
1tsp.pumpkin pie spice
1tsp.cornstarch
Cobbler Topping
½cupall purpose flour
½cupgranulated sugar
½tsp.baking powder
¼tsp. salt
1stickbuttercold and cubed
1egg
½tsp.vanilla extract
Instructions
Place sweet potatoes in a saucepan and add enough water to cover them.
Stir in granulated sugar, vanilla extract, and cinnamon stick. Heat potatoes and sugar mixture over medium-high heat, and bring to a boil.
Reduce heat to simmer potatoes for 8 minutes.
Remove the saucepan from the heat, drain and discard the cinnamon stick.
Preheat oven to 375 and grease a small baking dish or 9" round pie plate with nonstick cooking spray.
Place cooked sweet potatoes into the prepared pan.
In a mixing bowl, mix together flour, sugar, baking powder, and salt.
Use a pastry blender to cut in cold butter pieces until the flour is in small, crumbly chunks.
Fold in egg and vanilla extract and mix the topping well.
Spoon crumbly mixture on top of sweet potatoes (which are in the pan already) and bake for 30-35 minutes or until hot and golden brown around the edges.
Remove sweet potato cobbler from the oven and cool until warm. Serve warm.
Notes
Serve warm and optionally with scoop of ice cream.
