How to make Sweet Potato Cobbler
- Place sweet potatoes in a saucepan and add enough water to cover them.
- Stir in granulated sugar, vanilla, and a cinnamon stick.
- Heat over medium-high heat, and bring to a boil.
- Reduce heat to simmer for 8 minutes. Remove from heat drain and discard cinnamon stick.
- Preheat oven to 375 and grease a small baking dish or 9″ round pie plate with nonstick cooking spray.
- Place sweet potatoes into the prepared pan.
- Mix flour, sugar, baking powder, and salt.
- Use a pastry blender to cut in butter until it’s in small chunks.
- Fold in egg and vanilla and mix well.
- Spoon crumbly mixture on sweet potatoes and bake for 30-35 minutes or until hot and golden brown around the edges.
- Remove sweet potato cobbler from the oven and cool until warm. Serve warm.
TIPS
- It is truly a cobbler as the top “crust” is sweet. This would also be delicious with a scoop of vanilla ice cream, but it’s so good as-is.

Sweet Potato Cobbler
- 2-3 pounds sweet potatoes peeled and cut into 1/2" cubes
- ¼ cup granulated sugar
- ¼ cup brown sugar
- ½ tsp. vanilla extract
- 1 cinnamon stick 2 inches
- 1 tsp. pumpkin pie spice
- 1 tsp. cornstarch
Cobbler Topping
- ½ cup all purpose flour
- ½ cup granulated sugar
- ½ tsp. baking powder
- ¼ tsp. salt
- 1 stick butter cold and cubed
- 1 egg
- ½ tsp. vanilla extract
Instructions
- Place sweet potatoes in a saucepan and add enough water to cover them.
- Stir in granulated sugar, vanilla extract, and cinnamon stick. Heat potatoes and sugar mixture over medium-high heat, and bring to a boil.
- Reduce heat to simmer potatoes for 8 minutes.
- Remove the saucepan from the heat, drain and discard the cinnamon stick.
- Preheat oven to 375 and grease a small baking dish or 9" round pie plate with nonstick cooking spray.
- Place cooked sweet potatoes into the prepared pan.
- In a mixing bowl, mix together flour, sugar, baking powder, and salt.
- Use a pastry blender to cut in cold butter pieces until the flour is in small, crumbly chunks.
- Fold in egg and vanilla extract and mix the topping well.
- Spoon crumbly mixture on top of sweet potatoes (which are in the pan already) and bake for 30-35 minutes or until hot and golden brown around the edges.
