Watermelon Feta Salad with Mint
Cubed fresh summer watermelon paired with salty geek feta cheese, mint leaves, basil leaves and a homemade lemon dressing. A perfect watermelon side dish recipe!

seedless watermelon
rind removed and cubed

cucumber
chopped

cup
feta cheese

olive oil
zest of one lemon
juice of one lemon

cup
chopped fresh mint

tbsp
chopped fresh basil
Instructions
Place cubed watermelon, chopped cucumbers, and crumbled feta cheese into a large bowl and mix well.
In a separate, smaller bowl, combine olive oil, lemon zest, lemon juice, fresh mint leaves, and basil leaves. Whisk well.
Pour homemade lemon dressing over the watermelon mixture and mix well to evenly coat.
Serve Watermelon Feta Salad immediately or cover and refrigerate until ready to serve.

Tips
Substitute feta cheese for goat cheese
Use a melon baller over cubes with the watermelon for a prettier presentation
