- Place ripe watermelon cubes, chopped English cucumbers, and salty feta cheese into a large bowl and mix well.
- In a separate, smaller bowl, combine olive oil, lemon zest, lemon juice, mint, and basil and whisk well.
- Pour over the fresh watermelon and crunchy cucumber mixture and mix well to evenly coat.
- Serve this refreshing salad immediately or cover and refrigerate until ready to serve.

Watermelon Feta Salad with Mint
Ingredients
- ½ large seedless watermelon rind removed and cubed
- 1½ cups cucumber chopped
- 1 cup feta cheese
- 2 tbsp. olive oil
- zest of one lemon
- juice of one lemon
- ½ cup chopped fresh mint
- 1 tbsp chopped fresh basil
Instructions
- Place cubed watermelon, chopped cucumbers, and crumbled feta cheese into a large bowl and mix well.
- In a separate, smaller bowl, combine olive oil, lemon zest, lemon juice, fresh mint leaves, and basil leaves. Whisk well.
- Pour homemade lemon dressing over the watermelon mixture and mix well to evenly coat.
