I don’t know what it was, but the lemon and basil just added a good flavor, kind of a little sweet. It was interesting and good.

Salad Ingredients:

  • Seedless watermelon, rind removed and cubed – I used half of a large, juicy watermelon for this. I think you could get away with making it with a whole “personal” watermelon, too.

  • fresh mint leaves
  • fresh basil

How to make Watermelon Feta Salad

  1. Place ripe watermelon cubes, chopped English cucumbers, and salty feta cheese into a large bowl and mix well.
  2. In a separate, smaller bowl, combine olive oil, lemon zest, lemon juice, mint, and basil and whisk well.
  3. Pour over the fresh watermelon and crunchy cucumber mixture and mix well to evenly coat.
  4. Serve this refreshing salad immediately or cover and refrigerate until ready to serve.

Watermelon Feta Salad with Mint


Prep Time 20 minutes
Cubed fresh summer watermelon paired with salty geek feta cheese, mint leaves, basil leaves and a homemade lemon dressing. A perfect watermelon side dish recipe!

Ingredients
 

  • ½ large seedless watermelon rind removed and cubed
  • cups cucumber chopped
  • 1 cup feta cheese
  • 2 tbsp. olive oil
  • zest of one lemon
  • juice of one lemon
  • ½ cup chopped fresh mint
  • 1 tbsp chopped fresh basil

Instructions

  • Place cubed watermelon, chopped cucumbers, and crumbled feta cheese into a large bowl and mix well. 
  • In a separate, smaller bowl, combine olive oil, lemon zest, lemon juice, fresh mint leaves, and basil leaves. Whisk well.
