Add ricotta cheese and 2 tablespoons honey to a food processor. Process for about 10 seconds.
Scrape down the sides and process for an additional 10 seconds or until smooth.
Carefully spoon the ricotta cheese mixture onto a shallow plate.
Drizzle with about one tablespoon of olive oil and the remaining tablespoon of honey.
Season generously with salt and cracked black pepper.
Serve whipped ricotta dip immediately with crusty bread or cover and refrigerate until ready to serve.
Notes
Try a bit of rosemary, minced garlic, and olive oil. While whipping the ricotta, add a bit of orange or lemon zest (or fresh lemon juice) to infuse the flavor into the cheese. Whipped cheeses go great as spreadable on a sandwich or bread. Grill or broil up Italian bread, French baguette slices, bagels, or crostninis for best results.
