Easy Lasagna Rolls with Tortillas

These lasagna rolls are basically what happened when I took the flavors I normally use for lasagna and wrapped them in flour tortillas instead. I use Italian sausage in both my spaghetti and lasagna, so I went with it here too. It is already seasoned and has plenty of flavor, which keeps the filling really simple.

Each tortilla gets pasta sauce, a sausage and cottage cheese mixture, and mozzarella, then everything is rolled up and baked under more sauce and cheese. I also measured out how much filling I used in each tortilla so you aren’t guessing and running out before you get to the last one.
If you are looking for the traditional pasta version instead, my American lasagna recipe also uses Italian sausage, cottage cheese, pasta sauce, and lots of mozzarella.
Why Use Tortillas for Lasagna Rolls?
Traditional lasagna rolls are made by spreading filling onto cooked lasagna noodles and rolling them up individually. These use soft flour tortillas instead, which means there are no lasagna noodles to boil or handle.
I used soft taco-size tortillas that were about 8 inches round. That size was big enough to hold the filling while still being easy to roll tightly.
The tortillas do soften underneath the sauce and cheese as they bake, but they still hold everything together well enough to pick up and serve individually.

Ingredients
- 1 lb ground Italian sausage – Italian sausage is already well seasoned, so there is no need to add a bunch of additional seasoning.
- 1/4 cup cottage cheese – Mixed directly into the cooked sausage for a little creaminess. Could also use Ricotta.
- 2 cups pasta sauce, divided – Used in the meat mixture, inside each tortilla, and over the top.
- 3 cups shredded mozzarella cheese, divided – Half goes inside the rolls and the rest melts over the top.
- 12 soft taco-size flour tortillas – Mine were approximately 8 inches round.
- Chopped fresh parsley – Optional for serving.

How to Make Lasagna Rolls with Tortillas
Cook the Italian sausage.
Add 1 pound of ground Italian sausage to a skillet and heat over medium-high heat. Cook, stirring frequently and breaking the sausage apart, until browned and no longer pink.
Remove the skillet from the heat and drain excess grease if necessary.
Add 1/4 cup cottage cheese and 1/4 cup pasta sauce directly to the cooked sausage and mix well.

Prepare the baking sheet.
Preheat the oven to 400°F and line a large baking sheet with parchment paper.
Add the filling.
Place one tortilla on a flat surface.
On one half of the tortilla, add:
- 1 tablespoon pasta sauce
- 3 heaping tablespoons sausage mixture
- 2 tablespoons shredded mozzarella cheese
I measured the filling this way because it makes it much easier to divide everything evenly between all 12 tortillas. Keeping the filling toward one half of the tortilla also makes it easier to get a tighter roll.

Roll the tortillas.
Starting on the filled side, wrap the tortilla tightly around the filling.
Place the lasagna roll seam-side down on the prepared baking sheet so it stays closed. Repeat with the remaining tortillas and filling.
This recipe makes 12 rolls. If your baking sheet does not comfortably fit all 12, bake the remaining rolls separately rather than crowding them.

Add sauce and cheese.
Spread the remaining pasta sauce over the tops of the rolled tortillas and sprinkle with the remaining shredded mozzarella cheese.

Bake.
Bake at 400°F for 10 minutes, or until the rolls are heated through and the cheese is melted.
Turn the broiler to high and broil for approximately 2 minutes, watching closely, until the cheese is bubbly and beginning to brown. Do not walk away during the broiling step because mozzarella can go from browned to burned quickly.
Remove the lasagna rolls from the oven and sprinkle with chopped fresh parsley (optional of course).

What to Serve with Lasagna Rolls
These lasagna rolls already have sausage, sauce, cheese, and tortillas, so I would keep the side dishes fairly simple. A salad, roasted broccoli, green beans, or another vegetable works well if you want something lighter on the plate.

Storing Leftover Lasagna Rolls
Store leftover lasagna rolls covered in the refrigerator. The tortillas will continue to soften as they sit with the pasta sauce, so I think these are best served fresh from the oven when the cheese is hot and bubbly.
Reheat leftovers until hot before serving.

- Starting on the filled side, roll the tortilla tightly and place seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.
- Spread the remaining pasta sauce over the tops of the rolled tortillas and top with the remaining shredded mozzarella cheese. Bake for 10 minutes, or until heated through and the cheese is melted.
- Turn the broiler to high and broil for approximately 2 minutes, watching closely, until the cheese is bubbly and lightly browned.
- Remove from oven and sprinkle with chopped fresh parsley, if using. Serve immediately.
