Jello Roll Ups

Jello roll ups are a simple 3-ingredient treat made with flavored gelatin, mini marshmallows, and water. As the mixture sets, you get the two-tone look that turns into those colorful spirals once everything is rolled and sliced. You can use just about any Jello flavor, so making a few different colors for one tray is easy.

I actually made these years ago and had trouble getting them to stay rolled after I sliced them. This time, I wrapped the entire roll tightly in parchment paper and refrigerated it again before cutting. That extra chill worked much better, and the Jello pinwheels held their shape. My kids liked them too, and they’re just something different to make with Jello.

Ingredients

The measurements below make one flavor, or about 12 Jello roll ups. Repeat the recipe separately for each additional color you want to make.

  • 1 small box (3 oz) flavored gelatin – Choose any flavor or color you like.
  • 1/2 cup boiling water
  • 1 1/2 cups mini marshmallows
  • Nonstick cooking spray – For lightly coating the pan.
  • Parchment paper

How to Make Jello Roll Ups

Lightly spray an 8×8-inch baking pan with nonstick cooking spray. Wipe the pan with a paper towel to spread a thin, even layer of spray across the bottom.

Add the flavored gelatin and boiling water to a mixing bowl. Stir for about 2 minutes, or until the gelatin is completely dissolved.

Add the mini marshmallows and microwave for 30 seconds. Stir until the marshmallows are completely dissolved. Mine took about another 2 minutes of stirring, so keep going until you no longer see pieces of marshmallow.

Gently pour the mixture into the prepared pan. Let it stand at room temperature for 30 minutes, then refrigerate for 4 hours or overnight until completely set.

Run a knife around the edges of the pan to loosen the Jello. Carefully remove the sheet from the pan and place it onto a piece of parchment paper.

Roll the Jello into a log, then wrap the parchment paper tightly around the entire roll. Refrigerate for 1 hour.

Unwrap the roll and remove the parchment paper.

Cut into 12 rounds and place the Jello roll ups onto a serving tray.

Making Different Colors and Flavors

You can make these with any flavor of gelatin you like. Each color needs its own batch using one 3-ounce box of gelatin, 1/2 cup boiling water, and 1 1/2 cups mini marshmallows.

One batch makes about 12 roll ups, so two flavors will make approximately 24 and three flavors will make approximately 36.

  • 1/2 cup boiling water
  • 1 1/2 cups mini marshmallows

  • Lightly spray an 8×8-inch baking pan with nonstick cooking spray. Wipe the pan with a paper towel to leave a thin, even coating across the bottom.
  • Add flavored gelatin and boiling water to a mixing bowl. Stir for about 2 minutes, or until the gelatin is completely dissolved.
  • Add mini marshmallows and microwave for 30 seconds. Stir until the marshmallows are completely dissolved. This can take about another 2 minutes of stirring, so continue mixing until no marshmallow pieces remain.
  • Gently pour the mixture into the prepared pan. Let stand at room temperature for 30 minutes, then refrigerate for 4 hours or overnight until completely set.
  • Run a knife around the edges of the pan to loosen the Jello. Carefully remove the entire sheet and place it onto a piece of parchment paper.
  • Roll the Jello into a log and wrap the parchment paper tightly around the roll. Refrigerate for 1 additional hour. This second chill helps the roll hold its shape once sliced.
  • Remove the parchment paper and cut the log into 12 rounds. If making more than one color, repeat the recipe separately for each flavor.
