Move over magic bars and chocolate chip cookie bars (sorry, I still love you!). There is a new recipe in town that combines the rich flavors of chocolate, the delicious ooey gooey of caramel and the perfect crunch of cookie to make a Twix twin cookie bar flavor.

One of the best cookie bar recipes you will find, these chocolate caramel cookie bars are easy to make, beautiful to display, and packed with a perfectly sweet flavor that will make everyone say MMMMMMMMMMMM. 

This caramel cookie bar recipe was provided by my good friend Amanda, whom lovingly tested and tasted these to perfection just for you! 

You don’t need extra candy bits or M&Ms to make your own magic and these layered cookie bars are a cross between the perfect cookie, perfect cake, and perfect candy bar to make a rich, decadent and beautiful cookie bar that you will LOVE.

Personally I like desserts that are FUN to make and are not just the same old, same old, so I am thrilled to show case these bars here!

Cookie Bar Ingredients:

  • 4 sticks unsalted butter – softened
  • 1 1/2 cup powdered sugar
  • 1 cup granulated sugar
  • 6 tsp vanilla extract
  • 4 cups flour
  • 14 oz baking caramel bits
  • 1/3 cup heavy whipping cream
  • 12 oz semi sweet or dark chocolate chips

Enjoy the Rich Taste : The crust is like a buttery shortbread cookie with a gooey layer in the middle of chocolate and caramel.. almost similar to the cookie and filling of a twix bar. So good!

Yields : 24 bars

Please note the recipe below shows 2 sticks of butter and is just a representation of the ingredients, but the actual recipe construction requires 4 sticks (2 cups) of butter.

How to make Layered Cookie Bars

This recipe provided by Amanda (above). If you have any questions, please feel free to let me know and she will answer! 

Preheat oven to 325 degrees.

Prepare a 9×13 baking dish by lining it with parchment paper and spraying it with a non-stick spray.

In a large bowl, combine the butter, powdered sugar, granulated sugar and vanilla and mix together until the butter is well combined.

Slowly add in the flour and mix well until all of the flour is added.

Take 3-4 cups of the dough mixture and press it into the bottom of your prepared baking dish.

Bake for about 25 minutes, until the base is set and the edges are golden.

Set aside to cool.

While cooling, pour the caramels and heavy cream into a pan and stir together on the stove top until it’s all melted and gooey.

Pour the caramel over the cookie base.

Evenly spread the chocolate chips all over the top of your caramel layer.

Then, using a small cookie scoop or a tablespoon, scoop out some dough from the remaining dough in your bowl.

Roll the dough into a ball and press it flat like a disc, then lay them all over your chocolate chip layer allowing them to overlap a little bit.

Bake for 35-40 minutes, until the top is golden brown.

Set out to cool completely.

The bars look the prettiest when they have cooled completely, but if you must cut them warm you can.. they will just be a little gooey.

  1. Oh my, Trisha, that caramel! Chocolate and caramel have got to be my favorite combination. Like a Twix bar, but with that yummy shortbread crust, wayyyy much better!

  2. Are you supposed to cool the bottom layer completely before adding the chocolate and caramel?

    1. Cool to the touch is fine!

  3. Can you use packaged caramels to melt for the bars? DAF

    1. This is a great question! TBH, a friend of mine had someone do that and the caramel turned out harder and less gooey…my guess is that it would require a ratio change in the cream and that is hard to predict. If you are really good at baking and can adjust accordingly, its fine to try and also adjust the cream so it stays gooey, but if baking isnt your thing its probably best to make as is.

  4. Could u use caramel made from condensed milk??

    1. Laura, I have never actually made that version but I dont expect it would cause too much of an issue. Unfortunately I do not know for sure.

    1. No, I do not think so. Caramel topping is a lot thinner than a regular caramel sauce.

  6. Are “caramel backings bits” the same as butterscotch chips?

      No – caramel baking bits are small tiny pieces of Caramel. Butterscotch bits are more closely related to chocolate chips in terms of melting.
