Mediterranean Cucumber Salad

This Mediterranean cucumber salad is light, crisp, and exactly the kind of thing you want to keep in the fridge when it’s hot out.

With just a handful of fresh vegetables, a splash of lemon, and a little feta on top, it works as a quick lunch, a simple side dish, or something cold to serve next to your grilled dishes.

What You’ll Need

This salad is great for summer. No lettuce, no creamy dressing, just clean, simple ingredients that hold up well in the fridge. You can prep it in the morning, and it’ll be ready for lunch or dinner later in the day and its honestly one of those salads that I love just as much the next day.

  • 4 mini cucumbers – sliced into 1/8″ rounds
  • 1/2 cup orange bell pepper – seeded and diced
  • 1/2 cup Roma tomatoes – seeded and diced to avoid excess liquid
  • 1/4 cup red onion – diced
  • 1/4 cup kalamata olives – diced or halved
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper – to taste
  • Feta cheese – crumbled (about 1/4 to 1/2 cup, depending on how much you like)

Note: You can mix in the feta or leave it for the top — whichever you prefer.

How to Make Mediterranean Cucumber Salad

  1. After chopping, dicing, and slicing, add cucumbers, bell pepper, tomatoes, onion, and olives to a large bowl and stir to combine.
  2. Pour in the lemon juice, sprinkle the oregano, and season with salt and pepper. Mix everything again.
  3. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to blend.
  4. Right before serving, give it one more mix and add the crumbled feta. You can also stir the cheese in fully if you like it evenly distributed.

Optional Swaps or Additions

  • It is fine to use other types of cucumbers. I like English cucumbers if mini are not available.
  • Drain and add canned chickpeas for a more filling salad.
  • Fresh herbs like parsley or dill work if you have them on hand and I think always work better than dried.
  • This salad also goes great with adding freshly air fried chicken or my favorite salmon recipe to make it a complete meal that can be served for dinner.

Serving Ideas

This cucumber salad makes a great side dish for grilled meats or Mediterranean-inspired mains. Salads go with just about anything and I recommend that you serve it with:

  • Grilled chicken or lab
  • Hummus and pita
  • Falafel wraps
  • Or just eat it straight from the bowl on a hot day!

Mediterranean Cucumber Salad

This Mediterranean cucumber salad is light, refreshing, and perfect for the summer. Made with crisp cucumbers, bell pepper, tomatoes, olives, and a touch of lemon and feta, it’s a simple side dish that pairs well with grilled meats or can be served on its own for a healthy lunch.

Ingredients
 

  • 4 mini cucumbers sliced into 1/8″ rounds
  • 1/2 cup seeded and diced orange bell pepper
  • 1/2 cup seeded and diced roma tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup diced kalamata olives
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 to 1/2 cup feta cheese crumbles

Instructions

  • In a large bowl, combine prepped cucumbers, bell pepper, tomatoes, red onion, and olives.
  • Add lemon juice, oregano, salt, and pepper. Stir well to combine.
  • Cover and refrigerate for at least 1 hour.
  • Just before serving, stir again and top with feta cheese. Mix in the cheese if preferred
