Expert Tips

Cinnamon: use good quality cinnamon for your Sopapilla Bars, as good cinnamon will take this dessert over the top!

Sugar: try mixing some brown sugar in with the white to give your Sopapilla Bars a little extra richness.

Chill: Cool Sopapillas in the fridge after baking for about 20 minutes to allow the cheesecake to set.  This will make cutting them into bars simpler.

Toppings: There are so many toppings you can put on your Sopapilla bars!  Here are some of my favorites:

  • Vanilla ice cream or whipped cream
  • Warm berries such as blueberries, raspberries, or strawberries
  • Sliced peaches, nectarines, or kiwi
  • Chocolate syrup, caramel, or warm honey

FAQ’s

What are Sopapillas?

Sopapillas originated in the Southwest and are essentially a deep-fried puff pastry that is covered in cinnamon and sugar.  I never knew about Sopapillas growing up, but I was a huge fan of fried dough, which is very similar in taste and texture.

How should Sopapilla Cheesecake Bars be stored?

Store leftovers in the fridge in an airtight container for up to 5 days.  Sopapilla bars can also be frozen, although the thawing process can cause the dough to lose its crispiness (all the more reason to eat ‘em up now!).

What’s the best way to soften cream cheese?

Place unwrapped cream cheese into a large microwave-safe bowl. Microwave at 50% power for 1 minute and stir.  Repeat two more times, or until the cheese is smooth, stirring often.
