9 Blueberry Recipes That Go Beyond Muffins

Blueberries are one of my favorite things to keep stocked in the kitchen, and not just for muffins. Over the years they’ve turned into breakfast casseroles, cake donuts, a skillet appetizer, dump cakes, jello salads, and a fresh fruit salad that’s just as good on its own as it is next to dessert.
Whether you’ve got a fresh carton from the farmers market or a couple cans of pie filling in the pantry, here are nine ways to put them to good use.

Breakfast
Blueberry French Toast Casserole
This one gets made the night before and baked the next morning, which is exactly how a holiday breakfast should work. Cubed bread gets layered with a sweetened cream cheese mixture and fresh blueberries, then baked until the top is golden and the inside is custardy. Frozen blueberries work fine in the sauce, but I stick with fresh for the berries on top.

Blueberry Breakfast Cake
Half breakfast, half dessert, and I mean that literally. This one started as a way to use up a flat of fresh blueberries from a pick-your-own farm, and it’s stuck around because it’s dense, not too sweet, and just as good with coffee as it is after dinner. A simple lemon glaze on top is optional but I always make it.
