Charcuterie Dip with Prosciutto and Blackberries

This charcuterie dip takes everything you love about a cheese board and bakes it into one warm, gooey dish. Cubed brie, rolled prosciutto, fresh blackberries, and a little heat from hot pepper jelly all melt together in the oven, then get finished with salt, pepper, and a drizzle of honey.

Like every baked brie I make, this one is impossible to stop eating.

It also reheats really well. It tastes best straight out of the oven, but if you have leftovers, just scoop some out and warm it up. The flavor holds up even better the second time around.

What You Need for This Charcuterie Baked Brie

  • Brie cheese cut into small cubes so it melts evenly through the whole dish instead of staying in one solid wheel.
  • Prosciutto rolled into little rosettes and tucked around the cheese. This is the same rolling technique I use for salami roses on a charcuterie board.
  • Garlic butter adds richness in small dollops around the dish.
  • Fresh blackberries for pops of sweetness against the salty meat and cheese.
  • Hot pepper jelly brings a little heat and tang. Homemade or store bought both work here.
  • Fresh rosemary sprigs for flavor and a beautiful finished look.
  • Salt, pepper, and honey added after baking to round everything out.
  • Crusty bread for serving.

How to Make Garlic Butter for This Recipe

THIS IS OPTIONAL IF YOU DO NOT HAVE PREMADE GARLIC BUTTER. If you do not have garlic butter on hand, it takes just a few minutes to make and keeps in the fridge for up to a week.

Mix together:

  • 1 stick (half cup) softened salted butter
  • 3 to 4 garlic cloves, minced
  • 1 tablespoon fresh parsley, diced

If you are using unsalted butter, add a quarter teaspoon of salt to the mix. Store in a sealed container in the fridge until you are ready to use it.

What Baking Dish to Use

Any oval or round baking dish in the 2 to 2 and a half quart range works well for this recipe. I used a 10 by 8 inch oval dish, which gave the cheese, prosciutto, and blackberries enough room to spread out without crowding. An 8×8 baking dish or similar sized oval casserole dish will also work.

How to Make Charcuterie Baked Brie Dip

Preheat the oven to 350 degrees and lightly grease your baking dish. Add the cubed brie, then roll and tuck the prosciutto in around the cheese.

Nestle the blackberries into the gaps, then add small dollops of garlic butter and hot pepper jelly throughout.

Tuck in a few small rosemary sprigs and bake for 8 to 10 minutes, just until the cheese is melted and beginning to bubble at the edges.

Finish with salt, pepper, and a drizzle of honey, then serve immediately with crusty bread.

Tips for the Best Charcuterie Dip

Make your own toasted bread. Slice a loaf of French bread, brush one side with olive oil, and bake for 5 to 10 minutes until dry. Let it cool slightly before serving alongside the dip.

Check your pepper jelly heat level. Homemade hot pepper jelly can vary quite a bit in spice. Taste yours ahead of time so you know what you are working with once it is baked in.

Skip the rosemary stems. The sprigs are there for flavor and presentation, not for eating. Let your guests know they are a garnish so nobody tries to chew on a stem.

Reheat leftovers gently. If you have any left, this scoops and reheats well, keeping plenty of flavor even the next day.

Charcuterie Dip with Prosciutto and Blackberries

Warm baked brie loaded with prosciutto roses, fresh blackberries, hot pepper jelly, and honey. An easy charcuterie dip ready in under 20 minutes.

Ingredients
 

  • 8 ounces brie cheese round cut into half inch cubes
  • 3 ounces prosciutto
  • 2 tablespoons garlic butter see notes for a homemade version
  • 6 ounces fresh blackberries
  • ΒΌ cups hot pepper jelly
  • 4 small fresh rosemary sprigs
  • 2 pinch salt and black pepper to taste
  • 1 tablespoons honey for drizzling
  • 1 loaf crusty bread sliced, for serving (or other dippers)

Instructions

  • Prep the dish: Preheat oven to 350 degrees and lightly grease a casserole dish.
  • Layer the dip: Add the cubed 8 ounces brie cheese round, cut into half inch cubes to the casserole dish. Roll the 3 ounces prosciutto and tuck into the dish around the cheese. Tuck in the 6 ounces fresh blackberries. Add small dollops of 2 tablespoons garlic butter and 0.3 cups hot pepper jelly around the cheese, meat, and fruit. Tuck in the 4 small fresh rosemary sprigs.
  • Bake: Bake for 8 to 10 minutes or until cheese is melted and just begins to bubble around the edges. Remove from oven and top with 2 pinch salt and black pepper, to taste and drizzle with 1 tablespoons honey, for drizzling.
  • Serve: Serve immediately with crusty bread, thick crackers, or crostini breads for dipping.

Notes

Garlic butter: mix half a cup softened salted butter with 3 to 4 minced garlic cloves and 1 tablespoon diced fresh parsley. If using unsalted butter, add a quarter teaspoon of salt. Keeps sealed in the fridge up to a week. Rosemary sprigs are a garnish and not meant to be eaten.Β
