This Delicious and Easy Queso dip can be made in the oven, on a grill, or in a smoker – and with Rotel, hamburger meat, cream cheese, and Velveeta, there is a reason why this combination became one of the most TikTok Viral Recipes of all time!

One of the most completely viral and best TikTok recipes to come out this summer was the Smoked Queso dip.
Delicious smoked dip, combined in a throwaway foil baking dish, popped right on the grill, smoker, or baked in the oven, is just begging to be made – and be eaten.
While we do not know if there will be fall sports, there is no reason to not make your own massive plate of Queso to enjoy in front of the TV.
The best part about making dips this way is they are also SO easy to alter!

This recipe can easily be altered with the flavors you want.
Here is our basic Queso dip ingredients, which you can make spicier if you want!
- hamburger meat
- Rotel Diced Tomatoes
- Sliced Jalapenos
- Cream Cheese
- Shredded Cheese
- Taco Seasoning
- Velveeta Cheese
- Whipping cream
- Diced onions

Authentic Queso Dip
Is this recipe an authentic Mexican cheese dip? I would say no. Is it delicious, fantastic, filling, and you should make it – yes! If you have an aversion to regular Velveeta Cheese, you could use other melting cheeses or even the Queso Blanco Velveeta cheese.
While I do not typically use Velveeta in my recipes (I like to use real cheese sauce), it works perfectly to keep this dip super smooth with minimal ingredients.
If you use shredded cheese only, it would clump.
ADDITIONAL AMAZING TOPPINGS PRIOR TO SERVING: Diced Avocados, Sliced Black Olives, Sour Cream
How to make Velveeta Queso
- Preheat Oven to 375 (or warm up grill, smoker)
- Cook hamburger beef, drain any excess oil if necessary.
- Combine cooked beef and all other ingredients together in tin foil disposable dish. Mix up.
- Place in oven for 15 minutes or until melted, stirring at the halfway point.
- Pull out of the oven and add two tablespoons whole whipping cream and mix (optional but makes a little smoother).
- Serve immediately with Scoops or Tortilla Chips.
- NOTE: Any dip that includes cheese WILL solidify as it cools over time, so warm back up if not eaten within an hour or so.
Smoked, Grilled, Baked or Slow Cooker?
On TikTok, we saw this dip thrown onto the grill, into the smoker, and tossed into the oven. No matter how you heat it, this is a true heat and eat recipe, so it’s just about melting everything down and mixing.
Timing can be adjusted depending on your temperature, but we found that 375 degrees for 15 minutes in the oven was perfect in our gas oven. Please see the full recipe card for thoughts on melting.
This Queso also does really well in a slow cooker because the cheese can stay heated, keeping it melty.
Make it Spicier!
It seems that spicy food is a constant source of arguing among my kids.
I kept this recipe super simple and kid friendly. If you are looking for more spice, instead of Rotel Tomatoes, try adding a jar of your favorite spicy salsa!

- 1 pound hamburger meat cooked
- 1 can Rotel Diced Tomatoes 14.5 oz – any flavor, but the ones with spices work great for this dip
- 7 oz. Sliced Jalapenos
- 1 block of Cream Cheese
- 2 cups of shredded Cheese taco flavored
- 1 pack Taco Seasoning
- 16 oz. Velveeta Cheese cubed
- 2 tablespoons whole whipping cream
- diced onions optional topping

For the half block of velveeta, is it the 16oz block or 32oz block?
I am so sorry to have just seen this and apologize for the delay. We use half of a 32 oz. block of cheese (so about 16 oz total). When we shopped, 32 oz were the only thing available at the store so we just halved it.
Great…I just seen your comment. I was making this to take to my Grandsons 1st Birthday party..it was requested by my son. I cut up the whole 32oz pkg of Velvetta and put in the 4 cups of taco cheese…thought it seemed like a lot of cheese but whatever. Plus Im doing it in the crockpot so I hope its not ruined cause ingred arent correct. I’ll make sure I check comments from now on first before I make something off of Pinterest.

Diane, I am confused on your comment. The ingredients are correct. If you put in a whole 32 oz and 4 cups of cheese, I am not sure why. It doesnt say that in the ingredients or in the recipe list anywhere. What she asked is what half a block of cheese is – 16 or 32 oz. What I said is that a half a block of the 32 oz – there was no mention of a whole block of Velveeta or 4 cups of shredded cheese. If you saw that on Pinterest, it may have been someone that doubled the recipe. That being said, I am sure it will be fine, it may just need longer to melt and a little more seasoning to counteract the amount of cheese.

After thinking about it, I think I know what happened. You are seeing the adjustable servings on the recipe card. This is something out of my control on my end. The recipe is made with a specific ingredients in mind and it allowed you to change it to 20, which basically adjusted the ingredients further from the original recipe. I dont see that as being a totally huge issue in a dip, but I have to reach out to the developer and ask how to turn that off as not all recipes can translate as easy as just doubling the ingredients.
I’m 42 and I grew up on this!! We wouldn’t always put the burger in it though. We’ve also always done it in the microwave, 1-2 minutes at a time, stir, repeat. I love this stuff!!
Microwave is also a quick method and good for college students!
