Broccoli Cranberry Salad Recipe

Suggested salad ingredients (although this salad is really flexible if you want to add more goodies like roasted sunflower seeds or carrot shreds) are 2 fresh broccoli crowns, half of a red onion, dried cranberries, and cooked bacon.  For the creamy dressing you will need mayonnaise, apple cider vinegar, and granulated white sugar. 

Salad Prep

The great news is you do not need to cook the raw broccoli. Its perfect raw. Just break the florets down to easy to bite into pieces. But you do need to use cooked bacon. I like to cook my bacon in the air fryer, but you can cook it stovetop, in the oven, or simply buy it precooked. Just make sure to cook it, cool it, and crumble it before starting on assembling the salad.

How to make Broccoli Cranberry Salad with Bacon

Rinse and cut raw broccoli florets into small bite sized pieces and place into a mixing bowl. Discard stems. Add onion, cranberries and bacon and mix well. Set aside.

In a small bowl, whisk together mayonnaise, vinegar, and sugar until smooth. Drizzle on top of broccoli mixture and mix well to evenly coat.

Cover and refrigerate until ready to serve. Store any leftover broccoli salad in an airtight container for up to 3 days.

Broccoli Cranberry Salad


Prep Time 15 minutes
Raw broccoli, dried cranberries, and cooked crispy bacon all wrapped into a tangy and sweet homemade dressing. A wonderful broccoli salad side dish recipe for potlucks.

Ingredients
 

  • 2 broccoli crowns raw – broken into bite sized florets
  • 1/2 red onion diced
  • 1/2 cup dried cranberries
  • 1 lb. bacon cooked until crispy and crumbled

Dressing

  • 1 cup real mayonnaise
  • 1/4 cup apple cider vinegar
  • 1/4 cup granulated sugar

Instructions

  • Choose a method and then cook bacon until crispy. Cool and crumble down.

  • Wash and Cut broccoli florets into small bite size pieces and place into a mixing bowl. Discard stems.

  • Add diced red onion, dried cranberries and cooked bacon into the same bowl with the broccoli and toss ingredients together.
    1/2 red onion, 1/2 cup dried cranberries
  • In a separate mall bowl, whisk together mayonnaise, apple cider vinegar and white sugar until the dressing is smooth.
    1 cup real mayonnaise, 1/4 cup apple cider vinegar, 1/4 cup granulated sugar
  • Drizzle dressing on top of broccoli salad and mix everything together well to evenly coat. Cover salad and refrigerate until ready to serve.

Notes

Can this salad be made ahead? Yes! In fact, I recommend its made ahead at least 4 hours to allow the flavors to really work together but 24 hours is fine as well.
