Chili For One

Chili is one of those recipes that is extremely subjective. Beef chili, bean chili, white chicken chili—there really are endless possibilities. And while my entire family loves to chow down on a slow cooker chili recipe all year long, sometimes you just want a quick, easy, personal-sized bowl.

That is why we have translated our favorite copycat Wendy’s chili recipe into a personalized single serving for one. This “hungry man” chili recipe is a small batch version perfect for lunch or a cozy night curled up on the couch. Making just about 3 cups, enjoy one big bowl or go in for seconds.

Don’t let the idea that chili needs to slow cook all day keep you from a super satisfying lunch recipe. 

Serve with homemade tortillas, top with croutons, or, if you have time, serve in an edible cornbread bowl that takes about 20 minutes in a cast iron pan.

Chili Recipe for One


Stovetop bean and beef small batch chili recipe for one.

Ingredients
 

  • 4 ounces ground beef
  • 2 tablespoons diced onion
  • 1 teaspoon minced garlic
  • 14.5 oz. stewed tomatoes
  • 1/4 cup canned dark red kidney beans drained and rinsed
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon ground black pepper
  • shredded cheese and sour cream optional for serving

Instructions

  • In a small skillet or saucepan, combine uncooked ground beef, diced onion and minced garlic. Heat over medium heat, stirring frequently until beef is browned.

  • Drain grease and return meat to pan.
  • Add can of stewed tomatoes, drained and rinsed beans and all of the suggested seasonings.
    14.5 oz. stewed tomatoes, 1/4 cup canned dark red kidney beans, 1/2 teaspoon chili powder, 1/2 teaspoon salt, 1/4 teaspoon cumin, 1/4 teaspoon ground black pepper
  • Over medium high heat, cook until mixture begins to boil. Stir and reduce heat to simmer.
  • Simmer for 10 minutes, stirring occasionally.
  • Remove from heat and serve topped with shredded cheese and sour cream, if desired.

*Easy to alter seasonings for more heat by removing or adding your favorite pantry spices.
