How to Make Chicken Caesar Pasta Salad
This Caesar salad pasta recipe is quick to throw together and perfect for a last-minute meal or side dish. It can be made with leftover chicken or store bought prepped chicken and bottled dressing, although you can always choose to make homemade Caesar if you prefer.
Mix the Base Ingredients
When I made this, I started by tossing the chicken, romaine, and pasta together in a large bowl. The key is making sure the pasta is fully cooled before mixing to keep the lettuce crisp.
Add the Dressing and Cheese
Next, I poured in the Caesar dressing and shaved Asiago cheese, stirring everything to coat evenly. You can always add extra dressing if you want, just note that if you intend to have leftovers, too much dressing will make the lettuce wilt.
Season and Serve
I seasoned the salad with salt and pepper, then topped it with croutons right before serving. If you’re making this ahead of time, I recommend refrigerating it and adding the croutons just before eating to keep them crunchy.
Tips & Variations
This chicken Caesar pasta salad is delicious as-is, but here are a few ways to switch it up:
- Swap the Protein – Try grilled shrimp or shredded store-bought rotisserie chicken for a quick variation.
- Switch up the pasta – Use whole wheat pasta, corkscrew pasta, or try with large shells. If you want to change up the dressing, it still would be delicious. I think BBQ ranch dressing sounds pretty good!
- Add More Crunch – Toss in sunflower seeds or chopped bacon (everyone loves bacon).
- Try a Different Cheese – Parmesan is classic, but Asiago (as shown) works just as well.
Can this salad be made ahead?
You can prep and add the chicken, pasta, and lettuce together, but do not add dressing or croutons ahead or they can wilt the lettuce and soften the croutons. do that right before serving.
