- mini cucumbers, sliced thin
- red bell pepper and yellow bell pepper
- Ginger vinaigrette dressing (to taste) – We used the brand Little Salad Bar Ginger Vinaigrette. It’s refrigerated at the store.
- Everything bagel seasoning (to taste)
How to make Cucumber Bell Pepper Salad
Start by combining the sliced cucumbers, red bell peppers, and yellow bell peppers in a large mixing bowl. Drizzle enough ginger vinaigrette dressing over the vegetables to coat them lightly; you can add as little or as much as you like.
- My tip is to start with just a drizzle, mix, and see if that is enough moisture. You can always add more, but you cannot remove it!
Toss the vegetables till evenly coated with the Ginger Vinaigrette dressing.
Sprinkle everything bagel seasoning generously over the mixture and stir again.
