- butter
- chicken breast
- diced onion
- canned items – black beans, whole kernel corn, cream of chicken soup, and diced green chilies.
- Cheeses required – cream cheese and shredded cheddar cheese or Mexican Cheese Blend.
- Frito corn chips
- chopped fresh cilantro.
Optional seasonings for the chicken – salt, black pepper, chili powder, and minced garlic.
How to make Frito Chicken Casserole.
- Preheat oven to 350 and grease 9×13 casserole dish with nonstick cooking spray. Set aside.
- Add butter, uncooked chicken, and diced onion to a large skillet and cook over medium-high heat until onions are translucent and the chicken is no longer pink.
- Stir in rinsed black beans, corn, cream of chicken soup, chilies, and cream cheese.
- Cook over medium-low heat until the cream cheese is melted and the mixture is smooth.
- Place 1/3 of the crunchy corn chips onto the bottom of the baking dish.
- Top with half of the chicken mixture and 1/3 of the shredded cheese. Repeat, ending with Fritos corn chips and cheese on top.
- Bake in preheated oven for 30 minutes.
- When cooking is complete, serve Frito chicken casserole with chopped fresh cilantro or one of your favorite toppings listed below.
Recipe Variations
This can be mixed up with shredded chicken or a ground beef mixture.

Frito Chicken Casserole
Equipment
- 9 x 13 casserole baking dish
- non-stick cooking spray
Ingredients
- 1 tbsp. butter
- 2 cups uncooked chicken breast cubed 1/2 inch
- ½ cup diced onion
- 15.5 oz. black beans drained and rinsed
- 15.25 corn drained
- 10.5 oz. cream of chicken soup
- 4 oz. diced green chilies
- 4 oz. cream cheese cubed for easier melting
- 2 cups shredded cheddar cheese
- 10 oz. Fritos corn chips
- chopped fresh cilantro
Instructions
- Preheat oven to 350 and grease a 9×13 baking dish with nonstick cooking spray. Set aside.
- Add butter, uncooked chicken pieces, and diced onion to a large skillet and cook over medium-high heat until the onions are translucent and the chicken is no longer pink.
- Stir in rinsed black beans, drained whole-kernel corn, cream of chicken soup, chilies, and pieces of cream cheese.
- Cook chicken mixture over medium-low heat until the cream cheese is melted and the mixture is smooth.
- Place 1/3 of the Frito corn chips onto the bottom of the prepared casserole pan.
- Top chips with half of the chicken mixture and 1/3 of the shredded cheese.
- Repeat the layering, ending with chips and cheese on top.
- Bake Frito Casserole for 30 minutes.
- When cooking is complete, serve with chopped fresh cilantro and toppings listed in the notes.
