Beef Tortilla Casserole
Ingredients
- 1 lb lean ground beef cooked
- 1/2 cup chopped onion
- 1 oz. taco seasoning packet
- 1 teaspoon oregano
- 15 oz. black beans drained and rinsed
- 15 oz. tomatoes with chilies Rotel
- 15 oz. corn drained
- 15 oz. tomato sauce 15
- 6, 8 flour tortillas
- 2 cups shredded cheddar cheese
Optional Toppings
- fresh cilantro chopped
- sour cream
Instructions

We loved it! I used cheddar jack and didn’t measure – used a lot – maybe 3 cups. It took longer than 15 minutes to melt, but still an easy, quick casserole. Good for a crowd.
