Roasted asparagus with garlic is the perfect side dish recipe for almost any meal. Oven baked, it doesn’t take long at all to whip up a low carb keto friendly side dish that will make your mouth water.
I love asparagus. But I don’t love it cooked or baked any which way. While I am usually a semi-fan of frozen veggies, asparagus is the one green that I can only enjoy fresh. It needs a nice snap to it versus that sorta soggy flavor you get when its in the microwave.
And because its quick to make in the oven and needs ingredients you likely already keep on hand, its also a simple choice to go from farm to table.

Tip: You could also use garlic salt if you have it. I did not. Instead I used garlic powder and salt!
Timing: The time to cook is so quick! I would say maybe 15 minutes for this including the baking, which makes this a fast and easy menu item.
Is asparagus a low carb veggie?
Its not that bad actually. You can safely eat asparagus on a low carb diet or a keto diet and is one of the more unique tasting of veggies. Pour on the cheese or wrap your asparagus with bacon for a side dish that everyone wants more of.
Oven Roasted Asparagus
Preheat oven to 400 and line a baking sheet with parchment paper.
Remove the ends of the asparagus by breaking them off. Discard ends.
Place asparagus on baking sheet. Drizzle olive oil over asparagus and use your fingers to coat the asparagus evenly. I find it’s easiest to use my hands. And then when you’re done, you can rub the oil into your hands! It’s a great way to moisturize them!
Spread the asparagus in a single layer on the baking sheet.
The main thing here is to roast on a single layer or you’ll have some asparagus cooked more than others. So even if you double or triple the recipe, make sure you keep the asparagus in a single layer.
Sprinkle with garlic powder and salt (yes you can use Parmesan too!)
Roast in oven for 10 minutes until asparagus is tender.
Remove from oven and serve.
