Grilled Pineapple Salad

If you have never had a grilled pineapple salad recipe, you are in for a treat. The ease of an air fryer to grill up pineapple and peaches smothered in a light lime dressing packed with flavor is perfect to accompany a classic chicken sandwich this summer.
Easy to make without firing up the grill, the air fryer makes this a warm salad recipe that can be done in just about 15 minutes.
This salad is absolutely upscale-looking (and tasting) and a great choice for a small custom dinner party.
Ingredients:
- air fryer grilled pineapple
- air fryer grilled peaches
- 1/2 of a red onion, chopped
- Two tablespoons chopped fresh mint, plus more for serving
- One tablespoon of olive oil
- One tablespoon of lime juice
- salt and pepper

Grilled Pineapple Salad Recipe
Add freshly air fried pineapple, air fried peaches, red onions, and fresh mint to a mixing bowl.
In a smaller bowl, combine olive oil, lime juice, salt, and pepper and whisk well. Drizzle the dressing mixture over the air fried fruit and gently toss to coat. Because the fruit is softer since its cooked, using tongs makes it easier.
This salad can be served immediately, either warm or at room temperature. I like adding additional fresh mint leaves for garnish.
Variations
Usually, I fully support adding additional ingredients to salads and making them your own, but serving a warm version is definitely more complicated. There are not as many veggies that can hang in the warm realm. That being said, adding chunks of fresh avocado or chopped bell peppers is a welcome alteration.
If you have leftover grilled pineapple salad, chop the remainder of the peaches and pineapples into smaller bite-sized (salsa-sized) pieces and layer them on top of grilled fish.

Grilled Pineapple Salad (Air Fryer)
Equipment
- mixing bowl
- tongs
- air fryer to grill pineapples and peaches
Ingredients
- 2 cups air fryer grilled pineapple
- 2 air fryer grilled peaches sliced
- 1/2 red onion chopped
- 2 tablespoon chopped fresh mint plus more for serving
Lime Dressing
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- salt and pepper
Instructions
- Prep: Before starting, pineapple and peaches must already be grilled. Please see article for link on how to grilled those fruits if you do not know how.
- Add air fried pineapple, air fried peaches, chopped red onions and freshly chopped mint leaves to a mixing bowl.2 cups air fryer grilled pineapple, 1/2 red onion, 2 tablespoon chopped fresh mint, 2 air fryer grilled peaches
- In a smaller bowl, combine olive oil, lime juice and salt and pepper and whisk well.1 tablespoon olive oil, 1 tablespoon lime juice, salt and pepper
- Drizzle lime dressing mixture on top of fruit and using tongs, toss gently toss to coat the fruit.
- Serve salad immediately with additional mint garnish if desired.
