This Ultimate Sunday Breakfast Casserole Recipe combines eggs, biscuits, sausage, and hash browns. This crowd-pleasing recipe is totally indulgent and incredibly filling and is fantastic to serve on holiday mornings.

Feeds a lot: Because this dish is full of biscuits, eggs, and sausage, the ingredients can go a long way. This dish can feed up to 12 people (just like our tater tot breakfast casserole) and leave everyone full until lunch (or later!), making it a perfect breakfast recipe to serve on a busy holiday morning. 

Make ahead: Like most breakfast casserole recipes, this recipe calls for overnight breakfast casseroles that can be prepped ahead and stored until ready to cook. Just prep and layer the dish and cover with plastic wrap or aluminum foil until ready to cook.

Adaptable: While we always make socially viral recipes as is, this dish can easily be adapted to include bacon, veggies, or even change out the sausage to turkey sausage. Great veggies to include are white onions and green pepper.

Ingredients

For this recipe, you’ll need ground breakfast sausage—breakfast sausage is ideal, but you can also substitute turkey sausage, ground beef, or hot sausage if you prefer. You’ll also need all-purpose flour, milk, kosher salt, and black pepper for seasoning. The recipe calls for frozen diced hash brown potatoes, often labeled as southern-style, which are simply diced potatoes.

For the biscuits, I used Pillsbury Grands southern homestyle big flaky biscuits, but any refrigerated biscuits will work—just quarter them before adding. Shredded cheddar cheese is my go-to, but Colby Jack or Monterey Jack are great options too. And don’t forget the eggs, which should be beaten before adding.

How to make Sunday Breakfast Casserole

  1. Add breakfast sausage to a large skillet and heat over medium-high heat until browned. Drain excess grease from brown sausage if necessary.
  2. Add flour and mix well with the ground sausage. Stir in milk and season generously with salt and pepper.
  3. Heat mixture over medium-high heat until mixture is thick and bubbly. Remove from heat and set aside. 
  4. In a separate skillet, cook hash brown potatoes according to package directions. Remove from heat once done.

  1. Preheat the oven to 375 and grease a 9×13 baking pan with nonstick cooking spray. Spread cooked hashbrown potatoes into the bottom of the prepared baking dish.
  2. Add quartered biscuit pieces on top of potatoes and 1-1/2 cups shredded cheddar cheese. Gently pour the beaten egg mixture on top, evenly distributing them throughout the pan.
  3. Top with homemade gravy (including the cooked sausage), and top the entire casserole with the remaining 1/2 cup cheese. Bake breakfast casserole for 35-45 minutes or until bubbly and the center comes out clean when a knife is inserted.
  4. Let the casserole dish stand for a few minutes before serving it hot.

    What is the egg mixture… not mentioned in the directions! I’m going to mix a cup of the milk with the 6 eggs and 3 cups in the sausage gravy!

      It is mentioned in the ingredients, 6 eggs beaten/whisked together and also shown in picture 7. That is the “egg mixture”. You pour that on top in the order of the instructions. However, maybe you didn’t understand that egg mixture was the mixed eggs, so I went back and edited the language to say whisked together and not just beaten. It is not our intention that someone didnt understand how to complete the recipe, so we want to make it clear for all. Thankyou for your feedback.

      I dont see why not – but remember that food cold right from fridge to oven takes longer to warm and then cook.
