 Ingredients

  • Buttermilk – Rich and creamy, buttermilk is the perfect choice for marinating chicken in spices. 
  • Seasonings and spices: paprika, dried oregano, garlic powder, onion powder, kosher salt, and ground black pepper
  • Boneless, skinless chicken breasts – Pound the defrosted chicken down to about 1/2″ thick
  • Vegetable oil for frying – There are many choices for frying oil, but vegetable oil (to me) has the lightest flavor that won’t change the taste of the overall recipe.

How to make Viral Bang Bang Chicken

Flavor the Chicken

  • Mix buttermilk, paprika, oregano, garlic powder, onion powder, salt, and pepper. Add chicken breasts and mix well.
  • If possible, tuck all chicken under the liquid. Cover and refrigerate for four hours or overnight. 
  • Remove from refrigerator and set aside.

Season Chicken

  • Mix cornstarch, paprika, oregano, garlic powder, onion powder, salt, and pepper. Set aside. 
  • Add oil to a frying pan, so it’s at least 1″ deep. Heat over medium-high heat. 
  • Dredge chicken into the cornstarch mixture, making sure to coat both sides.

Fry Chicken

  • Place into hot oil with a cooking time of about 4-5 minutes on each side until brown and crispy.
  • Drain each piece of chicken on a  paper towel.

Smother in Bang Bang Sauce

Whisk together mayonnaise, sweet chili sauce, sriracha, and spoon chicken with sauce.

Top with chopped green onions and serve with extra sauce if desired.

Ingredients
 

Bang Bang Chicken Ingredients

  • 4 chicken breasts about 1/2" thick
  • 2 cups buttermilk
  • cups cornstarch
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • fresh green onions
  • vegetable oil

Spicy Sauce Ingredients

  • 1 cup mayo
  • ½ cup sweet chili sauce
  • ¼ cup sriracha 
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  • To start, make sure chicken breasts are defrosted and pounded into no larger than 1/2 inch thick or timing on frying may need to be adjusted.
  • Mix together buttermilk, paprika, oregano, garlic powder, onion powder, salt and pepper.
  • Add chicken breasts and make sure both sides are covered in the marinade mixture. If possible, tuck all chicken under the liquid. Cover and refrigerate for four hours or overnight for the best flavor. Remove chicken from refrigerator and set aside.
  • In a shallow bowl, mix together cornstarch, paprika, oregano, garlic powder, onion powder, salt, and pepper. Set bowl aside. 
  • Add vegetable oil to a frying pan so it's at least 1" deep. Heat oil over medium-high heat. 
  • Dredge chicken into the corn starch mixture, making sure to coat both sides of chicken breasts.
  • Place chicken into hot oil and cook, about 4-5 minutes on each side, until brown and crispy. Drain excess grease on paper towels. 
  • In a medium bowl, whisk together mayonnaise, sweet chili sauce, and sriracha and spoon generously over hot chicken.
  • Top Bang Bang chicken with chopped green onions and serve. Serves 4-6
