Cucumber Tomato Onion Salad

This cucumber tomato onion salad recipe is light and delicious! A simple, bright homemade dressing over red ripe tomatoes and chopped onion will soon be your go-to side dish for using up those crunchy cucumbers in your fridge.

Prepping this salad is pretty self-explanatory. Its also incredibly easy to make variations by adding additional vegetables, different seasoning choices (ranch goes great with cucumbers), or simply chopping your veggies into smaller pieces or chunks to make it easier to serve in a group setting. 

Absolutely one of my dishes to whip up, this is my personal guilt free lunch in the afternoons. As a bonus, if I have salad leftovers, its even better the next day after it has had time to sit and marinate.

Ingredients:

  • 3 cucumbers, sliced into thin rounds
  • 3 Roma tomatoes, sliced in rounds
  • 1/2 cup chopped yellow onion
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/4 cup chopped fresh cilantro
  • salt and pepper

Cucumber Tomato Onion Salad Recipe

Prep vegetables by slicing Roma tomatoes and cucumbers into thin rounds. Chop yellow onion. Add sliced cucumbers, tomatoes, and onions to a mixing bowl and toss. Set bowl aside.

Tip: A tomato knife and an onion chopper is life changing for salads.

In a separate bowl, combine olive oil, lemon juice, cilantro, salt and pepper and mix. This is such an easy dressing for a cucumber and tomato salad! Drizzle vinaigrette dressing on top of cucumber, tomatoes, and onions and mix well to evenly coat. It is sometimes easier to use tongs to make sure every bit of the veggies gets the dressing.

Cover and refrigerate the salad for at least one hour or overnight for flavors to mingle. Mix well before serving to prevent settling.

As always, a bit of added salt and pepper before serving is optional but recommended. This salad can be served by itself but also goes great alongside chicken tenders.

Cucumber Tomato Onion Salad

Cucumbers, ripe tomato, and slices of onions all wrapped into a tangy dressing. A classic summer side dish that takes less than 10 minutes to prep.

Ingredients
 

  • 3 cucumbers sliced into thin rounds
  • 3 roma tomatoes sliced in rounds
  • 1/2 cup yellow onion chopped
  • salt and pepper

Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/4 cup chopped cilantro

Instructions

  • Begin by preparing the vegetables. Slice the cucumbers and Roma tomatoes into thin rounds and chop the yellow onion and cilantro.

  • In a large mixing bowl, combine the sliced cucumbers, tomatoes, and chopped onion. Set aside.
  • In a separate small bowl, whisk together the olive oil, lemon juice, chopped cilantro, salt, and pepper until well combined.

  • Pour the dressing over the cucumber mixture, tossing everything together until evenly coated.
  • Cover the bowl and refrigerate for at least one hour, or overnight, to allow the flavors to mingle. Stir the salad well before serving to ensure it’s evenly mixed.
