Thin but Chewy Cookies
Baking desserts is fun, but as a side dish recipe blog, it’s not always my main focus. And when I make desserts, I prefer easy-to-make treats like no-fail fudge, peanut brittle, and cream cheese mints. But when these brown sugar chocolate chip cookies went viral on Instagram and TikTok, I knew they had to be something special worth hauling out the pans for.
These chewy chocolate chip cookies are thin yet bake up large. They combine brown sugar, the most chocolatey chocolate chunks, and a sprinkle of sea salt for the perfect cookie.

How to make Brown Sugar Only Chocolate Chip Cookies
- Prepare the Butter: Melt and let it cool for approximately 10 minutes.
- Mix Sugars and Butter: In a large bowl, combine the cooled butter, light brown sugar, and white sugar. Beat well until creamy.
- Add Wet Ingredients: Add the eggs and vanilla extract to the sugar mixture and beat well.
- Combine Dry Ingredients: In a separate bowl, mix the flour, baking soda, and regular salt. Gradually add the dry ingredients to the wet mixture and beat until combined.
- Fold in Chocolate Chunks: Gently fold the chocolate chunks with a spatula.
- Chill the Dough: Cover the bowl and let the batter stand for 30 minutes. This helps the flavors meld and the dough firm up.
- Preheat and Prep: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Portion the Dough: Using a 2-tablespoon scoop, portion the dough onto the baking sheet, ensuring the cookies are about 2 inches apart. (You should fit six cookies per sheet.)
- Add Sea Salt: Sprinkle a pinch of coarse sea salt over each dough ball.
- Bake: Bake the cookies for 9 minutes, then let them stand on the baking sheet for 2 minutes before transferring them to a cooling rack.
- Repeat: Repeat until all the batter is used and the cookies are baked.

FAQs
Q: Can I use dark brown sugar instead of light brown sugar? A: Yes, but the flavor will be slightly richer and more molasses-like.

Q: How do I store these cookies? A: Store the cookies in an airtight container at room temperature for up to a week or freeze them for longer storage. You can also freeze cookie dough you may have left over.
Q: Why do I need to let the batter stand? A: Allowing the batter to stand helps the dough to firm up, resulting in a chewier cookie.
