Cheesy Potato and Bacon Casserole
This cheesy potato and bacon casserole is perfect for a side dish but is also a crowd favorite at holidays. The potatoes are so filling and the bacon adds a nice flavor boost to make this recipe a total win. You can fill out a tray and DIG IN.
I also love this baked potato salad (HOT side dish) for a great alternative option to this cheesy potato and bacon casserole.
Recipe Ingredients:
- 2 pounds red potatoes
- 2 tablespoons butter
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon parsley
- 1/3 cup sour cream
- 2 ½ cups shredded cheese, separated
- 6 strips of bacon, chopped and separated
Alterations to this recipe:
- Easily make this into ham and potato casserole by adding chunks of ham over the bacon
- Chopped Onions make a nice addition of flavor
- Need some color? Add chopped green onions at the end
Cheesy Potato Casserole recipe
Similar to a twice baked potato recipe, this easy casserole dish is a chunky potato favorite for everyone. I cannot think of any more loved starchy comfort food than potatoes and it’s one of the best side dish recipes to feed a crowd inexpensively.
Unfortunately this potato side dish is not a keto approved or low carb recipe, however its one of those recipes that is worth every bite.

1. Preheat oven to 350 degrees Fahrenheit.
2. Dice potatoes and steam or boil just until fork tender.
3. Strain cooked potatoes and pour into a bowl. While potatoes are still warm, add butter, salt, black pepper, and parsley. Stir until potatoes are coated with butter and seasoning.
4. Allow potatoes to cool slightly, then mix in the sour cream, two cups of shredded cheese, and the majority of the bacon. Stir to combine.
5. Pour mixture into greased casserole dish and top with remaining cheese.
6. Bake for 15 to 20 minutes, or until cheese is completely melted.
7. Remove from oven and top with remaining bacon and additional parsley, if desired.

I checked, its not in slow cooker on my end. Its in “casseroles” and side dishes. I am not 100% sure why its showing for you in slow cooker.
