- Vegetable oil – While many times different kinds of oil are interchangeable; I find that extra virgin olive oil is too strong of a flavor for this recipe.
- Seasonings – chili powder and kosher salt.
- Street Corn Sauce – sour cream, adobo sauce, real mayonnaise lime juice, and salt.
- Topping – cotija cheese and chopped fresh cilantro.

How to make Corn Ribs
- Preheat the oven to 425 and line a baking sheet with parchment paper. Set aside.
- Cut corn into strips – Slice fresh corn in half lengthwise and cut each ear of corn half in half, making four quarters for each ear. Set “ribs” onto a prepared baking sheet.
- Mix vegetable oil, chili powder, and 1/2 teaspoon salt. Using a pastry brush, brush the blend of spices mixture over each corn rib.
- Bake for 20 minutes and then broil on high to char corn. As always, we recommend observing when using the broiler not to burn or overcook.
- Mix mayonnaise, sour cream, adobo sauce, and lime juice in a small bowl, and season with salt.
