How to make Corn Ribs
- Preheat the oven to 425 and line a baking sheet with parchment paper. Set aside.
- Cut corn into strips – Slice fresh corn in half lengthwise and cut each ear of corn half in half, making four quarters for each ear. Set “ribs” onto a prepared baking sheet.
- Mix vegetable oil, chili powder, and 1/2 teaspoon salt. Using a pastry brush, brush the blend of spices mixture over each corn rib.
- Bake for 20 minutes and then broil on high to char corn. As always, we recommend observing when using the broiler not to burn or overcook.

Ingredients
- 4 ears sweet corn husks and silk removed
- 2 tbsp. vegetable oil
- 1 tbsp. chili powder
- ½ tsp. salt
Elote Sauce
- ¼ cup real Mayo
- ¼ cup sour cream
- 3 tbsp. adobe sauce
- 1 tbsp. lime juice
- dash of salt
Corn Rib Topping
- ½ cup Cotija Cheese Crumbled
- Fresh Cilantro
Instructions
- Preheat the oven to 425 and line a baking sheet with parchment paper. Set pan aside.
- Slice corn on the cob in half lengthwise and then cut each half in half making four quarters for each ear. Set corn ribs onto the prepared baking sheet.
- In a bowl, combine vegetable oil, chili powder, and 1/2 teaspoon salt.
- Using a pastry brush, brush the oil and seasoning mixture over each corn rib.
- Bake corn for 20 minutes. OPTIONAL – Turn to broil on high to char corn – keeping a careful eye not to burn. This takes just a few minutes to get a level of char.
- In a small bowl, whisk real mayonnaise, sour cream, adobo sauce, lime juice and a dash of salt.
- Spread elote sauce with a pastry brush onto hot corn.
- Top corn with cheese crumbles and chopped fresh cilantro and serve while still hot.
Notes
- Serve and eat immediately. Much like corn on the cob, this recipe doesn’t taste as good the next day. Shred left over corn kernels and add to a salad or dip instead!
