dye egg whites for gorgeous and easy cloud bread

What is Cloud Bread?

First of all, cloud bread is aptly named because this huge ball of egg whites and a bit of sugar, is fluffy as a cloud. If you have ever made meringue, its quite like that, but without the loads of sugar.

Is Cloud Bread Keto?

Actually, cloud bread started out for the low carb and keto community to be a replacement for bread! The egg whites (and without sugar) make it a great bread-like substitute for those that are skipping the carbs.

Is Cloud Bread GOOD?

Well, I always say things are worth trying. This viral recipe is more fun than tasting great, although I have had some readers chip in and tell me that adding some cocoa powder and different herbs and spices can make all the difference in the world. Charlotte thinks it tastes like nothing at all and I think it tastes just like eggs.

The best part about cloud bread, in my opinion, is just how FUN it is to make. Only 3 ingredients, you can really put this recipe together quite quickly and its kinda fun to play with and design. As a colorful video person, it makes my heart sing to add fun rainbow colors like we did here, so I say make it and enjoy the process.

Layer each egg white on a parchment paper

How to get Stiff Peaks with Egg Whites

One of the hardest parts about this recipe is getting the egg whites ready. While the original TikTok Recipe states that you can use a whisk to create the white stiff peaks, any chef will tell you that that will take half your life. You CAN do it, but you may regret it. Instead, use a stand mixer to add in your egg whites until producing a fluffy cloud. Add in your sugar and corn starch, a little at a time, till all incorporated near the end.

Try not to just dump in the ingredients as adding in a little bit at a time helps keep your egg whites fluffy.

Rainbow Cloud Bread (TikTok Viral!)

Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes
Rainbow Cloud Bread from TikTok, a super fun cloud bread recipe layered in bright beautiful rainbow colors is fun to make and a culinary experience your teens and kids will love duplicating! Only 3 ingredients to a fluffy masterpiece!

  • 6 tablespoons of liquid egg whites
  • 2 1/2 teaspoons of Corn Starch
  • 2 1/2 tablespoons of white sugar
  • OPTIONAL: a drop of vanilla a drop or two of food coloring

  • Preheat oven to 300 and place a piece of parchment paper flat on a sheet pan.  Spray parchment paper with non stick cooking spray.
  • The key to making cloud bread is getting your egg whites into stiff peaks to bake.
  • First add 6 tablespoons of liquid egg whites into a bowl. Whisk (or mix on high in a mixer) until the egg whites start to bubble up in mini bubbles, about 2-3 minutes.
  • Slowly add corn starch and white sugar, 1 tsp at a time so you can maintain the fluff.
  • Now mix until egg whites are stiff peaks. You can do this by hand or a stand mixer. My stand mixer (on high) takes about 10-12 minutes of mixing until ready and I recommend using a stand mixer as it does take a bit for it to mix properly. Hand mixing with a whisk will take a long time.
  • If you are making RAINBOW cloud bread, separate into bowls and add food coloring. Use a hand mixer to fluff up.
  • Once egg whites are fluffy and stiff (stand on own), add to a sheet pan covered in parchment paper into a round loaf shape. If you are making a rainbow, layer the colors in a line, making sure the egg whites are not flat but are instead fluffy and high.
  • Place sheet pan in oven on 300 for 25-26 minutes.
  • The top may slightly browned , which is normal.
  • Peel cloud bread slowly from the parchment paper.

The original recipe on tiktok noted 3 large egg whites - that typically equals out to 2 tablespoons per egg which is 6 tablespoons total of liquid egg whites. That being said, in my other cloud bread recipe, we altered the recipe for 9 tablespoons to produce more at a time for a larger fluff cloud in our recipe. We have had no issues with either recipe variation.
